Rosco Texas Caviar

Ingredients

  • Servings: 10
  • 1 (16 ounce) can corn
  • 1 (16 ounce) can black beans, drained
  • 3 (16 ounce) cans black-eyed peas, drained and rinsed of all juice
  • 1 (6 ounce) jar chopped pimiento, juice included
  • 1 bunch scallion, thinly sliced, green part only
  • 1 tablespoon fresh oregano
  • 1 tablespoon tabasco sauce
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon black pepper
  • 1 tablespoon cilantro (fresh)
  • 1/2 bunch parsley, chopped
  • 1 (6 ounce) can diced chilies (or 3 diced jalapenos)
  • 1 (16 ounce) can diced tomatoes
  • 1 1/2 cups italian dressing
  • 1 green bell pepper, finely chopped
  • 4 fresh garlic cloves, diced

Recipe

  • 1 mix all ingredients together.
  • 2 let sit for 4-8 hours before serving (so flavors mix).
  • 3 serve with tortilla chips.
