Shrimp W/ Mango Rice

Total Time: 1 hr 30 mins Preparation Time: 1 hr Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 tablespoon fresh garlic, minced
  • 1 tablespoon fresh ginger, peeled & minced
  • 1 tablespoon soy sauce
  • 4 teaspoons curry powder
  • 1/8 teaspoon ground red pepper
  • 1/8 teaspoon ground cumin
  • 1 1/2 lbs medium shrimp, peeled & devined
  • 2 cups water
  • 1 cup coconut milk
  • 1 1/4 cups wild rice, uncooked (brown rice optional)
  • 3/4 cup carrot, shredded
  • 2 mangoes, peeled & diced
  • 1 1/2 cups red peppers, diced
  • 1/2 cup green onion, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt

Recipe

  • 1 combine the first 6 ingredients in a medium bowl, add shrimp, toss to coat, cover & chill 1 hours.
  • 2 bring water and coconut milk to a boil in a medium saucepan. add rice & cover. reduce heat & simmer 30 minutes or until liquid is absorbed.
  • 3 remove from heat & add next 8 ingredients; toss gently to combine.
  • 4 prepare saute pan to medium heat and coat with cooking spray.
  • 5 place shrimp in pan & cook 3 minutes on each side, until pink/done.
  • 6 mix rice & shrimp.
  • 7 plate & garnish.

Shrimp With Bourbon Cocktail Sauce

  • 1/2 cup mayonnaise or 1/2 cup salad dressing
  • 1/4 cup cocktail sauce
  • 1/4 cup whipping cream
  • 1 tablespoon bourbon, if desired

Recipe

Sesame Soba Salad (pasta Salad)

Ingredients

  • 1 (8 ounce) package soba noodles
  • 6 scallions, sliced
  • 1 1/2 cups mung bean sprouts
  • 6 radishes, sliced or 1/2 cup grated daikon radish
  • 1 teaspoon sesame seeds, toasted (optional)
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1/2 tablespoon rice vinegar
  • 1 1/2 tablespoons toasted sesame oil
  • 1 tablespoon tahini (sesame seed paste)
  • 1/16 teaspoon chinese cayenne pepper

  • 1 boil some water in a pot, break the soba noodles in half and place them in the pot.

  • 1/2 cup vegetable oil
  • 1/3 cup sesame seeds
  • 4 medium onions, thickly sliced
  • 1/2 cup soy sauce
  • 1/4 cup lemon juice

  • 2 garlic cloves, crushed
  • 2 1/2-3 lbs boneless beef top sirloin steaks, cut 1 1/2 inch thick

  • 1/2 cup soy sauce
  • 4 cloves garlic, forced through a garlic press
  • 2 tablespoons sesame oil
  • 2 teaspoons minced ginger
  • 3 tablespoons sugar
  • 1 tablespoon red vinegar, plus
  • 1 teaspoon red vinegar
  • 1 tablespoon lightly toasted sesame seeds, plus

  • 80 ml balsamic vinegar

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3 cups shrimp stock (or chicken stock)
  • 3 tablespoons sour cream
  • 1/2 lb button mushrooms, wiped clean and sliced
  • 1/4 cup onion, chopped
  • 1/4 cup green onion, chopped (with tops)
  • 2 tablespoons basil, chopped
  • 1/4 cup heavy cream
  • 60 shrimp, medium-size, peeled and deveined

Recipe

  • 1 melt the butter in a small saucepan and add the flour. whisk over medium heat until the roux is pale blond, smooth and bubbly.
  • 2 bring the stock to a boil in a large saucepan. add the roux and mix well. add the sour cream and blend. add the mushrooms, onions, green onions and basil.
  • 3 simmer for 5 minutes. add the cream and stir well to blend. add the shrimp and continue to simmer until they turn pink, 3 to 4 minutes. season with salt and pepper, and serve immediately over the risotto cakes.

Shrimp Wheels

Ingredients

  • 1 (4 1/2 ounce) can baby shrimp, drained and mashed
  • 1/4 cup mayonnaise
  • 2 tablespoons pimento stuffed olives, chopped
  • 1 tablespoon celery, finely chopped
  • 2 tablespoons bottled chili sauce
  • 1 package crescent roll dough

Recipe

  • 1 preheat oven to 375 f degrees.
  • 2 combine the first 5 ingredients.
  • 3 unroll and separate crescents into 4 rectangles.
  • 4 spread 1/4 of the shrimp mix on each rectangle.
  • 5 roll up jelly role fashion.
  • 6 using a sharp knife, cut each roll into 10 slices.
  • 7 place on a greased baking sheet and bake 10-12 minutes or until golden brown.
  • 8 serve hot.

Shrimp Tostadas

Ingredients

  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper, freshly ground
  • 1 teaspoon kosher salt
  • 1 teaspoon chili powder
  • 1 teaspoon packed brown sugar
  • 1/4 teaspoon dried oregano
  • 2 tablespoons extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 1/2 lbs shrimp, shelled, deveined, rinsed, and drained
  • 1 medium onion, sliced
  • 1 medium poblano pepper, cored, seeded, and sliced
  • 1 medium bell pepper, cored, seeded, and sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1 medium lime, cut into wedges
  • 6 (6 inch) corn tortillas

  • 1 cup lettuce, chopped

  • 1 heat oven to 450 degrees. cover a large baking sheet with foil. lay tortillas on sheet and spray with cooking spray. turn over and spray other side. when oven is heated, bake for 10-15 minutes or until light golden brown. they may still appear floppy, but will become crispy as they cool. remove and place on plate covered with paper towels. blot with a paper towel to absorb any excess oil.
  • 2 in a small bowl, combine the cumin, garlic powder, pepper, salt, chili powder, brown sugar, and oregano. put the olive oil in a ziptop bag and mix in all but 1 tablespoon of the spice mix. add the garlic and shrimp; massage to coat. set aside.
  • 3 heat a 12-inch sauté pan over medium-high heat, and, when hot, coat with cooking spray. add the sliced onion and sauté until softened and fragrant and starting to brown, about 4 minutes. add the chile and bell pepper and continue to sauté for 2 minutes. add the remaining spice mixture and sauté until the onion and chiles are tender but not mushy, another 1-2 minutes. transfer to a bowl. return the skillet to medium high heat and add the shrimp. cook, stirring frequently, until the shrimp are cooked through, 2-3 minutes. add the sautéed vegetables; toss to combine and reheat.
  • 4 spread a small amount of guacamole on tostada. spread a small amount of sour cream over guacamole, then add some lettuce. add some sauteed vegetables and top with shrimp. sprinkle with chopped cilantro.
  • 5 serve with additional sour cream and guacamole.

  • 1/2 cup minced shrimp
  • 1/4 cup ground lamb
  • 4 water chestnuts, minced
  • 2 tablespoons minced green onions
  • 2 tablespoons cornstarch

  • 1 (4 pound) whole chicken
  • 1 lemon, juiced
  • 5 tablespoons salt
  • 1 teaspoon paprika

  • 1/4 cup thousand island dressing
  • 2 cups water

Recipe

  • place the sectioned chicken parts in a shallow, nonporous dish so that the pieces fit snugly.
  • in a separate, nonporous small bowl, combine the lemon juice, salt, paprika, ground black pepper, garlic and thousand island dressing. mix well, pour over the chicken and add water to cover.
  • cover and refrigerate, allowing the chicken to marinate for 8 hours.

  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon ground oregano
  • salt
  • 1 tablespoon garlic powder
  • 1 teaspoon sugar
  • 1 bunch scallion, finely chopped including green
  • 2 cups onions, chopped
  • 1 cup cilantro, chopped
  • 2 -3 jalapenos, finely chopped (remove seeds & veins for less heat)
  • 4 cups chopped tomatoes
  • 2 cups tomato juice
  • 2 cups water
  • 12 corn tortillas
  • 2 tablespoons canola oil or 2 tablespoons olive oil
  • monterey jack cheese, grated, to garnish

  • 1 peel and devein the shrimp and set aside (if they are large cut into chunks.
  • 2 in a small bowl, blend the paprika, cayenne, black pepper, oregano, salt, garlic & sugar. set aside.
  • 3 pour a small amount of oil into 4 quart dutch oven or pot. add the onions, cilantro and jalapeño. sauté just until the onion is transparent, then stir in the chopped tomatoes. add the spice mix and simmer 10 minutes, stirring occasionally. add tomato juice and water and simmer another 10 minutes.
  • 4 add shrimp and cook 5 minutes or just until shrimp are done. do not overcook.
  • 5 while soup is simmering, cut tortillas into strips and place on a pammed cookie sheet. spray with olive oil; sprinkle with salt if desired. bake at 350°f for about 5 to 7 minutes. watch closely so they don’t burn.
  • 6 to serve, place a layer of tortilla strips in the bottom of a shallow soup bowl. ladle soup on top then garnish with cheese. add a lime wedge on the side.

  • 6 cups low sodium chicken broth
  • 2 (15 ounce) cans hominy, rinsed

  • 2 add seasoning to a pot of boiling water, this will foam up. use only enough water to cover the shrimp, you will have to estimate here. you do not want to use way more water than necessary.
  • 3 add shrimp and cook until they just turn pink 30-45 seconds. *this will likely take a bit longer depending on the size of your shrimp. it is important not to overcook the shrimp at this point. this is the timing the chef recommends but i boil longer and cool differently than she suggests, see next step for clarification.

  • 2 tablespoons olive oil
  • 2 garlic cloves, pressed

  • 1 cup vegetable broth
  • 6 roma tomatoes, chopped
  • cumin, chili powder, salt, pepper, oregano to taste
  • 1 teaspoon cornstarch
  • 1 teaspoon water
  • 1/3 cup fresh cilantro

Recipe

  • 1 combine shrimp, lime juice, salt, and pepper in a bowl, toss to coat. don’t use your hands if you have a paper cut. you’ll see. let it soak while you’re chopping the other stuff, about 15 minutes. unload the dishwasher if you have extra time, showoff.
  • 2 heat olive oil in a large pan over medium heat. saute onion and pepper for 3 minutes. add garlic, then saute until tender.

  • 1 lb fresh snow pea, trimmed
  • 2 teaspoons vegetable oil

  • 1/4 cup diagonally sliced green onion ( parts only)

  • 1 teaspoon minced fresh ginger
  • 1/4 teaspoon asian chili sauce (to taste)

  • 1 bring a large pot of salted water to a boil.

  • 8 ounces raw shrimp, peeled and deveined
  • 1/2 scallion, chopped (green part only)
  • 1/4 teaspoon paprika
  • 2 tablespoons light mayonnaise
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon dried dill weed
  • 1/2 teaspoon baking powder

Recipe

  • 1 preheat oven to 400° and prepare 24 mini muffin cups by spraying with cooking spray.

  • 1/4 teaspoon baking powder
  • 1/2 cup margarine
  • 1 cup brown sugar, packed

  • 1 combine flour and baking powder.
  • 2 cream together margarine, sugar, egg and vanilla.
  • 3 mix the flour mixture together with the margarine mixture and stir in the sesame seeds.

  • 5 drop by the teaspoonful leaving room for spreading.

  • 3 tablespoons sesame paste (tahini)

  • 1/3 cup yellow sweet onion, coarsely chopped

  • 3 slices prosciutto, coarsely chopped

  • 1 in large saute pan, heat olive oil over medium high heat, add butter to melt. add trinity (onion, celery, red pepper)and saute gently for a few minutes until aromatic. lower heat and add garlic and prosciutto, cooking a minute more. carefully add , and cook until liquid has nearly evaporated. remove from pan and hold.
  • 2 in same pan, add a splash of olive oil and heat, adding shrimp. cook until heated through and pink. do not overcook! remove from heat.
  • 3 in large saucepan, add half & hslf, butter and trinity mixture. bring just to boil, then reduce heat and gently simmer, stirring occasionally to allow sauce to slightly thicken.
  • 4 meanwhile, bring water to boild for pasta. add angel hair and cook approximately 4 minutes (al dente). drain, reserving 1/2 c pasta water. toss pasta with some of the pasta water and cover to keep warm.

  • 1 head bok choy
  • 2 tablespoons peanut oil
  • 1 tablespoon grated ginger
  • 1 tablespoon minced garlic
  • 1/2 cup chicken stock
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons soy sauce
  • 2 teaspoons rice vinegar
  • 1 teaspoon sugar
  • salt and pepper
  • 2 tablespoons sesame seeds

Recipe

  • 1 trim the bok choy. slice the leafy portion from the stalks. cut both the leaves and stalks into large matchstick sized pieces, keeping two piles.
  • 2 heat a large heavy skillet until hot. add oil and coat the pan. add the bok choy stems; stir fry about 5 minutes.
