Rotisserie Chicken And Couscous

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 cup uncooked couscous
  • 1 1/2 cups chicken broth (or water)
  • salt
  • 2 cups dried fruit
  • 1/2 cup slivered almonds
  • 1 rotisserie chicken
  • 2 tablespoons olive oil

Recipe

  • 1 bring the chicken broth and salt (you will need more salt if you use water) to a boil and stir in the couscous for one minute.
  • 2 remove from heat and let sit while you carve the chicken into bite-size pieces.
  • 3 fluff the couscous with a fork and stir in the dried fruit, slivered almonds, chicken pieces, and olive oil.
