Margarita Dressing

Ingredients

  • 3 tablespoons tequila
  • 3 tablespoons fresh lime juice
  • salt & freshly ground black pepper, to taste
  • 2 tablespoons fresh cilantro, chopped
  • 1/4 teaspoon ground cumin
  • 1/2 cup olive oil

Recipe

  • 1 combine the ingredients except for the olive oil in a medium-sized mixing bowl. whisk in the oil a little at a time until the dressing becomes thick, then beat in the remaining oil in a steady stream.

  • 1 quart mild honey
  • 3/4 cup dried organic rose petal

Peach Melba Tarts

Ingredients

  • Servings: 12
  • 1/4 cup seedless raspberry jam
  • 1 teaspoon water
  • 1 cup red raspberries, 24 more for garnish
  • 3 cups vanilla ice cream
  • 1/4 teaspoon almond extract
  • 16 ounces diced peaches, drained
  • 1/3 cup slivered almonds, toasted
  • 12 miniature graham cracker pie crusts

Recipe

  • 1 place ice cream in refrigerator to soften slightly.
  • 2 in a small nonstick pan, melt jam over low heat, stirring, about 2 minutes. remove from heat, stir in water & cool for 5 minutes.
  • 3 set aside 24 raspberries for garnish; add remaining 1 cup to jam mixture & stir gently.
  • 4 spoon cooled raspberry sauce in tart crusts, about 1 tablespoon each.
  • 5 stir together peaches, almond extract & toasted almonds. remove ice cream from refrigerator, stir it smooth & fold in peach mixture.
  • 6 working quickly, spoon 1/3 cup ice cream atop raspberries in each shell.

  • 1/2 cup good-flavored honey
  • 1/4 cup dried lavender flowers (organic) or 1/4 cup fresh lavender flowers (organic)
  • 1 1/2 cups whole milk
  • 1/4 cup sugar
  • 1 pinch salt
  • 1 1/2 cups heavy cream
  • 5 large egg yolks

Recipe

  • 1 in a small saucepan, heat the honey and 2 tablespoons of the lavender; once warm, remove from the heat and set aside to steep at room temperature for 1 hour.
  • 2 warm the milk, sugar, and salt in a saucepan.
  • 3 pour the cream into a large bowl and set a mesh strainer on top.
  • 4 pour the lavender-infused honey into the cream through the strainer, pressing on the lavender flowers to extract as much flavor as possible; discard the lavender and set the strainer back over the cream.
  • 5 in another bowl, whisk the egg yolks; slowly pour the warm mixture (step 2 mixture) into the egg yolks, whisking constantly, then scrape the warmed egg yolks back into the saucepan.

  • 1 put the un-opened can of eagle brand sweetened condensed milk into a pot of boiling water, making sure that the can is always submerged in water at all times; cook it for 3 hours.
  • 2 once done, let it cool down and eat it the next day.

Peach Melba

Ingredients

  • 2 cups water
  • 1/4 cup lemon juice
  • 1 lemon, zested
  • 3 peaches, halved,pitted and skinned
  • 1 lb raspberries
  • 1 cup sugar
  • 2 tablespoons lemon juice
  • 1/2 quart vanilla ice cream
  • 2 cups heavy cream, whipped
  • 1 cup sliced almonds, toasted

Recipe

  • 1 in a medium saucepan, prepare syrup.
  • 2 bring sugar, water, lemon juice and zest to a boil.
  • 3 lower to a simmer and cook for 10 minutes.
  • 4 poach peaches until tender.
  • 5 let them cool in the syrup.
  • 6 to prepare the raspberry sauce, in a blender combine raspberries, sugar and lemon juice.
  • 7 process to a puree.
  • 8 remove fruits from syrup.
  • 9 to serve, in a small bowl place a scoop of vanilla ice cream, place the fruit on top and cover with raspberry sauce.
  • 10 garnish with whipped cream and toasted almonds.
  • 11 for apricot melba, use 12 ripe, firm apricots, pitted and halved (no need to skin).

Ingredients

  • 5 large ripe peaches, peeled and sliced
  • 1/2-3/4 cup sugar (the riper the fruit, the less sugar necessary)
  • 1/8 teaspoon ascorbic acid
  • 1/4 cup flour, plus
  • 1 tablespoon flour
  • 1/2 cup heavy cream
  • 1 egg
  • 1/8 teaspoon nutmeg
  • 2 teaspoons vanilla extract
  • 1 quart fresh raspberry
  • decorator sugar

Recipe

  • 1 peel and slice the peaches.
  • 2 whisk together 1/4 cup of the sugar, the ascorbic acid, and 1 tablespoon of signature secrets or flour (or 1 1/2 teaspoons instant clearjel), then mix with the peaches and set aside. roll the pie crust dough into a 14- to 15-inch circle to fit an 11- to 12-inch tart pan or baking dish. place it into the pan.
  • 3 stir together the cream, the remaining sugar and thickener, the egg, nutmeg and vanilla; spread over the bottom of the crust. place the peaches onto the cream filling, arranging them in concentric circles. spoon any juice from the bowl over the peaches. fold the edges of the crust in toward the center.
  • 4 bake the tart in a preheated 425°f oven for 20 minutes. reduce the oven heat to 375°f; tent the edges of the tart with foil, and bake for an additional 30 to 35 minutes. cool at least 20 minutes before serving. if pie won't be served right away, refrigerate it, and then bring to room temperature before serving. just before serving, sprinkle with fresh berries and sugar. this is best served the same day.

  • 1 1/3 cups peach nectar, chilled
  • 1 1/3 cups chamomile-lavender simple syrup (see intro)
  • 1 cup grape juice, chilled
  • cantaloupe (and or honeydew melon balls and lemon slices) (optional)

Recipe

  • 1 in a pitcher combine lemon juice, peach nectar, simple syrup and grape juice. transfer mixture to a serving pitcher. pour into ice-filled glasses. garnish with melon balls and lemon slices, if desired.
  • 2 for one serving:.
  • 3 for a single serving in a tall glass combine 1/2 cup lemon juice, 1/3 cup peach nectar, 1/3 cup chamomile-lavender simple syrup, and 1/4 cup grape juice. add ice. garnish with melon balls and lemon slices.

Frozen Pineapple Cantaloupe Mousse

Ingredients

  • 1/2 cup frozen pineapple concentrate, thawed
  • 1/2 cup water
  • 2 tablespoons unflavored gelatin
  • 3 cups cubed cantaloupe
  • 3/4 teaspoon almond extract
  • 3/4 cup vanilla yogurt
  • 3 large egg whites, get pasteurized egg whites that are safe for kids

Recipe

  • 1 to prepare the mousse cups, cut four strips of aluminum foil, each 8 inches long and 2 inches wide. wrap a strip around the top of each of four 4-oz paper cups. secure the foil with tape and set the cups aside.
  • 2 in a heatproof bowl, mix the juice concentrate with the water.
  • 3 sprinkle the gelatin on the top.
  • 4 place the bowl in a large saucepan. add enough water to the saucepan to come halfway up the side of the bowl.
  • 5 heat over low heat, stirring continually until the gelatin dissolves. set aside.
  • 6 chop the cantaloupe cubes coarsely by hand or in a food processor; do not liquefy.
  • 7 add the almond extract, juice mixture, and vanilla yogurt; stir or process briefly to blend. set aside in a bowl.
  • 8 beat the egg whites until stiff but not dry. gently fold them into the fruit mixture.
  • 9 divide the mixture among the mousse cups and freeze until firm, at least 1 1/2 hours.

  • 1 place eggs in pan and add enough cold water to cover by 1 inch.

Ingredients

  • 6 -7 medium limes
  • 3 cups sugar (about)
  • 3 tablespoons tequila, preferably silver
  • 1 tablespoon triple sec or 1 tablespoon cointreau liqueur

  • 1 zest the limes, measuring 6 tablespoons to ½ cup lightly packed lime peel (the strips of peel should be no wider than about ¼ inch).

  • 1 in a large saucepan over high heat bring water just to a boil. remove from heat, stir in dried lavender flowers, and let steep for 20 minutes. after 20 minutes, strain mixture into a deep kettle or pot, discarding the lavender flowers. stir in lemon juice and pectin; continue stirring until the pectin is dissolved.
  • 2 over high heat, bring the mixture to a boil then add sugar. when the jelly solution returns to a hard rolling boil, let it boil for 2 to 4 minutes (see below), stirring occasionally.

  • 1 in a large saucepan, bring 4 cups water to a boil and remove from heat.

  • 3 add lavender and sweetener, stir well. let steep for an hour. at first the liquid will be greenish, but after the hour has passed it should be slightly purple.
  • 4 strain liquid into an appropriately sized pitcher to remove all solids.
  • 5 add lemon juice; stir well. color changing kool-aid has nothing on this—when you add the lemon juice the lavender water changes from dull purple to vivid pink!

Recipe

  • 1 in a heavy, non-reactive saucepot combine raisins and water and let raisins soak until they plump.

  • 1 clean any debris from sink.
  • 2 boil a gallon of water. slowly, pour this down the drain. for minor clogs, this may do the trick. if not, continue with next steps.

  • 6 when the orange is completely peeled, cut between the membranes that divide the segments so that again, no pith or membrane shows.

  • 1/2 cup dried edible lavender flowers
  • 1 lemon, juice of
  • 1 (1 3/4 ounce) box dry pectin or 1 (3 ounce) envelope liquid pectin

Recipe

  • 1 in a large saucepan over high heat bring water just to a boil.
  • 2 remove from heat and stir in dried lavender flowers. cover and let steep for 20 minutes.
  • 3 after 20 minutes, strain mixture through a fine mesh strainer into a deep kettle or pot, discarding the lavender flowers.
  • 4 stir in lemon juice and pectin; continue stirring until the pectin is thoroughly dissolved.
  • 5 over high heat, bring the mixture to a hard rolling boil (a full rolling boil that cannot be stirred down).
  • 6 add sugar. when the jelly solution returns to a hard rolling boil, let it boil for 2 to 4 minutes (see below), stirring occasionally.
  • 7 boil times:.
  • 8 2 minutes - soft gel.
  • 9 4 minutes - medium gel.
  • 10 testing for "jell" (thickness - i keep a metal tablespoon sitting in a glass of ice water, then take a half spoonful of the mix and let it cool to room temperature on the spoon. if it thickens up to the consistency i like, then i know the jelly is ready. if not, i mix in a little more pectin (about 1 teaspoon to 1/2 of another package) and bring it to a boil again for 1 minute.
  • 11 after boiling, transfer the jelly into hot sterilized jars. fill them to within 1/4 inch of the top, wipe any spilled jam off the top, seat the lid and tighten the ring around them.
  • 12 process in a water bath for 10 minutes. remove jars to wire rack and let cool before serving.
  • 13 makes five 1/2 pints.

  • 5 egg whites
  • 1/4 teaspoon orange zest
  • 3 ounces hazelnut pralines, crushed coarsely
  • 1 1/4 cups heavy cream
  • 2 tablespoons amaretto
  • remaining hazelnut praline
  • 6 strawberries
  • 6 sprigs mint

  • 1 praline: lightly oil a sheet pan.
  • 2 melt the sugar in a small sauce pan, over low heat, increasing the temperature gradually.
  • 3 continue to cook until the sugar turns golden brown (swirl, but do not stir).
  • 4 immediately fold in the hazelnuts, and quickly spread the mixture on the sheet pan.
  • 5 the caramel will start to set very quickly.
  • 6 when the praline has cooled and is hard, break it into small pieces; set 6 pieces aside for the garnish, and finely crush the remaining praline.
  • 7 souffle: cut six 13-by-4-inch strips of parchment or aluminum foil.
  • 8 form into collars around six 6-ounce ramekins, and tape or tie in place.
  • 9 cut a quater of the strawberries into 1/4-inch chunks, and toss with 3 tablespoons of sugar.
  • 10 set aside to macerate for 20 minutes.
  • 11 puree the remaining strawberries in a blender or food processor, and reserve.
  • 12 whip the egg whites until soft peaks form.
  • 13 gradually sift in the remaining sugar, and whip until a stiff, light meringue forms.
  • 14 fold in the orange zest, crushed praline, drained macerated strawberries, and strawberry puree.
  • 15 whip the cream until stiff and fold into the strawberry meringue along with the amaretto.
  • 16 ladle the mixture into the prepared ramekins, filling them to 1/2 inch from the top of the collars.
  • 17 set on a tray and freeze overnight.

  • 3 grind oranges (both pulp & rind) in a food processor. add to peaches.
  • 4 measure the total amount of fruit and add an equal amount of sugar.
  • 5 cook over "medium" heat until the mixture starts to thicken. this will probably take 1 - 1 1/2 hours.
  • 6 stir in amaretto, cooking until jel stage (coats a spoon).
  • 7 stir in the almonds.
  • 8 pour into hot, sterlized jars & seal.

Margaritas On The Rocks

Ingredients

  • Servings: 4
  • 3/4 cup tequila
  • 1/2 cup fresh lime juice (from 4 to 6)
  • 1/2 cup triple sec or 1/2 cup cointreau liqueur
  • 1/2 cup cold water
  • 1 lime, sliced
  • kosher salt

Recipe

  • 1 in a pitcher, combine the tequila, lime juice, triple sec and cold water.
  • 2 rub the rims of 4 glasses with fresh lime slices and dip into a plate of kosher salt so the rims are coated.
  • 3 add ice to the glasses and pour 1/4 of the margarita mixture into each glass.
  • 4 serve to your guests.
