Mrs. Hoggle's Stuffed Cranberry Sauce

Ingredients

  • 9 cups apple cider
  • 1/2 cup red-hot candies

Recipe

  • 1 pour apple cider into a percolator.
  • 2 place candies in percolator basket.
  • 3 cover, and begin the perking cycle.
  • 4 when the cycle is complete; remove the basket, and leave punch in the pot to keep warm.

  • 1/4 ounce dry yeast (1 package or 2-1/4 tsp)

  • 1 combine the yeast and warm water. mix well and add to plants.

Kalamaria Toursi (pickled Calamari)

Ingredients

  • Servings: 4
  • 1 lb small squid
  • 1 teaspoon salt
  • 4 bay leaves
  • 4 sprigs fresh oregano
  • 10 whole black peppercorns
  • 2 teaspoons coriander seeds
  • 1 small fresh red chili, halved and seeded
  • 2 1/2 cups good quality wine vinegar
  • 2 -3 tablespoons olive oil

Recipe

  • 1 clean squid (see directions at bottom of instructions). cut squid into 3/8 inch rings.
  • 2 place 8 cups water, salt and one bay leaf in a large saucepan. bring to a boil and add the calamari. reduce heat and simmer for 5 minutes. drain and dry well.
  • 3 pack the squid rings in a clean dry 2 cup jar with a sealing lid. add the oregano, peppercorns, coriander seeds, chili and remaining bay leaves.
  • 4 cover completely with the vinegar then gently pour in enough olive oil to cover by 3/4 inch. seal and refrigerate for one week.
  • 5 when ready to serve, remove from the marinade, place on a serving dish and garnish with lemon wedges and chopped fresh parsley.
  • 6 to clean a jar: wash the jar and lid in hot soapy water, rinse well in hot water and then dry in a very slow 250f oven for 20 minutes. do not use a towel to dry the jar.
  • 7 to clean squid: grasp each squid body in one hand and the head and tentacles in the other. pull apart to separate them. cut the tentacles from the head by cutting below the eyes. discard the head. push out the beak and discard. pull the quill from inside the body and discard. under cold running water, pull away the skin. you can use the flaps.

  • 1 hardboil your eggs normally.
  • 2 when they are cool enough to handle, roll them around on a hard surface to crack them. try not to break the membrane. develop a nice overall cracked look.

  • 4 you could make really cool looking deviled eggs with these.

  • 1 place the first three ingredients in a bowl and stir to blend.
  • 2 add cream and whisk until light and thick.
  • 3 pour into individual dishes and chill.
  • 4 serves 4.

Ingredients

  • 2/3 cup imperial margarine, softened
  • 2 1/2 cups granulated sugar
  • 2 1/3 cups all-purpose flour
  • 4 eggs
  • 1/3 cup fresh lemon juice
  • 2 tablespoons grated lemon peel
  • confectioners' sugar

Recipe

  • 1 preheat oven to 350°f.
  • 2 line 13x9-inch baking pan with aluminum foil, then spray with nonstick cooking spray; set aside.
  • 3 in large bowl, with electric mixer, beat imperial spread and 1/2 cup granulated sugar until light and fluffy, about 3 minutes.
  • 4 beat in 2 cups flour until fine crumbs form.
  • 5 press into prepared pan. bake uncovered 20 minutes.
  • 6 meanwhile, in medium bowl, with electric mixer, beat eggs, remaining 2 cups granulated sugar, remaining 1/3 cup flour, lemon juice and lemon peel 4 minutes or until light and fluffy; pour over hot baked crust.
  • 7 bake an additional 25 minutes or until lemon minxure is just set.
  • 8 on wire rack, cool completely.
  • 9 using foil, lift out of pan. spray knife with nonstick cooking spray and cut into triangles.
  • 10 to serve, sprinkle generously with confectioner's sugar.

Lemon Verbena And Mint Tea - French Verveine And Mint Tisane

  • 1 put the fresh herbs (and lemon peel if using) in to a warm teapot. add the boiling water.

  • 3 to serve chilled, remove the mint and lemon verbena sprigs and refrigerate before serving with ice cubes and fresh sprigs of lemon verbena and mint.

Recipe

  • 1 combine frosting mix(dry), corn syrup, vanilla and boiling water in a small bowl.
  • 2 beat on highest speed until stiff peaks form, about 5 minutes.
  • 3 transfer to a large mixing bowl, on low speed gradually blend in sugar.
  • 4 stir in nuts.
  • 5 drop by spoonfuls on wax paper.
  • 6 when outside of candy feels firm, turn over and allow to dry at least 12 hours.
  • 7 store in an air tight container.

  • 1 beat eggs and sugar together until thickened and pale.
  • 2 add the cooled melted margarine and vanilla or anise.

  • 5 of batter in center of mold, close lid, and cook for 30-60 seconds.
  • 6 remove pizzelle carefully with a fork and lay on flat surface till cool.

Recipe

  • 1 put 1 quart water in a pot and bring to a boil.
  • 2 turn off heat and steep tea bags and mint in hot water for 15 minutes or more.
  • 3 remove tea bags and mint and discard.
  • 4 add sugar, stirring to dissolve.
  • 5 add orange and lemon juices.
  • 6 add enough water/ ice to make 4 quarts.

  • 400 g mint leaves, lollies

Recipe

  • 1 place egg in a bowl & beat in enough icing sugar to give a stiff spreadable consistency, cover icing with a damp cloth.
  • 2 stack 3 cones together using a little icing between each, repeat with remaining cones.
  • 3 starting at the base of the cone spread icing over 1/3 cone and place a row of mint leaves around the base, overlapping the 1st layer.
  • 4 spread remaining cone with icing & continue arranging rows of mint leaves around the cone until about 6 or 7 rows are formed leaving a little space at the top.
  • 5 repeat this procedure with remaining cones, icing & leaves.
  • 6 cover top with silver cachous & sprinkle with a little extra icing sugar.

Mini Lemon Cream Pies (no Bake)

  • 2 cups vanilla yogurt (approximate)
  • 6 small graham cracker pie crust
  • 1 (11 ounce) jar of prepared lemon curd
  • 1 lemon, zested for garnish

  • 1 spoon 2 tablespoons of lemon curd into each crust.
  • 2 top with approximately 1/4 cup+ of vanilla yogurt- so the lemon curd is covered but yogurt isn't spilling over the edges.
  • 3 sprinkle with lemon zest.
  • 4 serve or refrigerate.
  • 5 (not sure how long they can"sit" in fridge. i made 1/2 hour before dinner and they were fine.).

  • 1 fire up the bbq.
  • 2 just cut this through the joints and then marinate this with the chilli sauce for 4 hours cook till soft and keep turning and basting it with the sauce which will take approx 20 minutes.

  • 1 cup onion, halved & sliced
  • 1 cup parsnip, halved & sliced

Recipe

  • 1 saute the onions and parsnips in oil for about 5 minutes, stirring occasionally to prevent burning.
  • 2 add the water and ginger. cover and simer for 4 to 5 minutes.
  • 3 add the kale and continue cooking 4 to 5 minutes longer. stir occasionally but keep the saucepan covered otherwise. serve hot.

  • 2 tablespoons vanilla or 2 tablespoons anise extract

Recipe

  • 1 beat eggs, adding sugar gradually.
  • 2 beat until smooth.
  • 3 add cooled margarine and vanilla or anise.
  • 4 sift flour and baking powder.
  • 5 blend into egg mixture until smooth.
  • 6 dough will be sticky enough to be dropped by spoon (use standard kitchen teaspoon, not a measuring spoon).
  • 7 bake in a pizzelle baker, 20-30 seconds; baking time will vary depending on consistency of dough, size of pizzelles and your preference for browning.

  • 6 cups water
  • 24 g gingerroot
  • 2 1/2 kg sugar (12 cups)
  • 6 cups plain flour
  • 6 teaspoons baking powder
  • 125 g margarine
  • 2 eggs
  • 125 ml evaporated milk
  • 312 ml lukewarm water
  • 1 pinch salt

Recipe

  • 1 syrup:.
  • 2 1. boil well 3 cups of water with the ginger.
  • 3 2. remove the ginger and add 3 more cups of water.
  • 4 3. bring to boil again.
  • 5 4. then add 2.5 kgs (12 cups) of sugar and allow to boil for 5 minutes.
  • 6 5. put in fridge and leave overnight.
  • 7 dough:.
  • 8 1. mix all the ingredients together and knead well and then leave to rest.
  • 9 2. roll the dough flat into an oval/square until it is 5mm thick.
  • 10 3. cut the dough into strips 2.5cm across.
  • 11 4. then cut these strips into lengths of 6cm. (so you are left with a whole bunch of rectangles 2.5cm x 6cm.).
  • 12 5. then make two cuts along the length of the rectangles so that you can braid them. what you're aiming at is the same braid in a scout's toggle. (or similar to a girl's 3-strand braid in her hair.).
  • 13 6. when you're finished you should have a whole bunch of braided dough pastries ready to be boiled in oil --
  • 14 7. cook these in hot oil until golden brown and crisp.
  • 15 8. dip the whole cooked koeksuster immediately into your cool syrup that you've hauled out the fridge.
  • 16 9. remove from the syrup and allow to cool (on a newspaper or kitchen towel) before eating.
  • 17 10. don't eat too many!

Kale For Kids (and Grownups Too!)

  • 1 bunch kale
  • 2 -3 tablespoons olive oil
  • 1 -2 tablespoon mirin (japanese sweet cooking sherry)

  • 1 wash the kale, cut the leaves from the center stem/rib, and chop roughly (the center stem is tough so you want to get the leaf off).
  • 2 put the kale in a large (12") frying pan, add the olive oil, mirin, and salt (the measurements are rough because i usually just pour long splashes of each on top of the kale) and turn up the heat to medium/ medium high.
  • 3 cook, covered, stirring occasionally, until tender (usually takes about 10-12 minutes, depending on the heat). taste, and add salt if needed (if kale is very bitter occasionally i'll add a little brown sugar).

Ingredients

  • 1 (10 1/8 ounce) package pillsbury big & flaky refrigerated crescent dinner rolls
  • 3 tablespoons nutella, approximately 1/2 tablespoon per crescent roll

Recipe

  • 1 preheat the oven to 350 degreen farenheit, or whatever temperature is called for on the can of crescent rolls.
  • 2 unroll the crescent rolls per package instructions.
  • 3 put about 1/2 tablespoon of nutella on the large end of each roll.
  • 4 roll them up.
  • 5 bake for the amount of time specified in the package directions, about 15 to 20 minutes.
  • 6 let cool for about five minutes before attempting to eat - the nutella is like lava when they first come out of the oven, and will hurt you. i speak from experience.

Recipe

  • 1 stir sugar and contents of package in a bowl until well blended.
  • 2 add 4 cups crushed fruit (for peaches, reduce to 3 1/2 cups). stir 3 minutes.

  • 4 twist on lids and let stand until thickened, about 30 minutes.

  • 1/2 cup margarine
  • 4 eggs
  • 1 dash salt
  • 1 teaspoon vanilla

Recipe

  • 1 combine all ingredients in a blender and mix well.
  • 2 pour into greased large pie plate.
  • 3 bake at 400 degrees for 10 minutes.
  • 4 reduce heat to 325 degrees and bake another 30 minutes, or until set.
  • 5 cool before serving.

  • Servings: 10
  • 1 tablespoon lemon juice
  • 2 -4 tablespoons honey or 2 -4 tablespoons granulated sugar
  • 3 cups fresh fruit (strawberries, blueberries, pineapple)
  • 3 cups ice

Recipe

  • 1 to the bowl of a food processor or high powered blender, add the fruit, honey or sugar (i used 2 tablespoons honey), lemon juice, and 2 cups ice. blend the mixture until chunky and then add the remaining 1 cup of ice. blend until completely smooth.
  • 2 pour the mixture into a 9- by 13-inch baking dish and place in the freezer for 30 minutes. after 30 minutes remove the ice from the freezer and scrape it with a fork until slushy. return to the freezer for another 2 hours.
  • 3 after 2 hours, you can then scoop the ice into cups. if the ice is too hard to scoop, let it sit out for 5 minutes to soften, or add the ice to a blender and blend until slushy. scoop into cups.

  • 2 cups heavy cream or 2 cups whipping cream

Recipe

  • 1 combine plums with 1/4 cup sugar. mash. let sit in refrigerator for 1 hour. you can then puree them or not. i liked them better pureed.
  • 2 beat eggs with 3/4 cup sugar until foamy.
  • 3 beat in cream and milk.
  • 4 if you're using mashed plums strain the juice into the cream mix and add the pulp when the ice cream is almost done. if using pureed plums add it all to the cream mix.
  • 5 freeze in ice cream maker.

  • 1 in a saucepan over low heat combine water and 2 tablespoons sugar, swirling occasionally until sugar dissolves. increase heat and bring to a boil. adjust heat so liquid barely shimmers.
  • 2 add plums to pan and cook for 3-5 minutes (or until tender). cool completely.
  • 3 in a saucepan bring cream, milk and vanilla beans to a simmer. remove from heat and let stand 10 minutes.

  • 8 tea bags
  • 2 quarts water
  • 1 cup sugar
  • 1 -2 tablespoon lemon juice

Recipe

  • 1 in a 4-cup measuring cup, heat 4 cups water in microwave to boiling.
  • 2 place tea bags in water and let steep for 5- 10 minutes.
  • 3 pour sugar into 2 quart pitcher and pour hot tea over it.
  • 4 squeeze tea bags to get out any remaining tea; add tea to pitcher and discard bags (if they are too hot to squeeze by hand, pull them up the side of the measuring cup with the strings and press with a spoon).
  • 5 stir hot tea until sugar is dissolved.
  • 6 add 4 cups cold water and lemon juice; stir well.
  • 7 chill until very cold and serve over ice with lemon.
