Honey Lavender Ice Cream

Total Time: 4 hrs 30 mins Preparation Time: 30 mins Cook Time: 4 hrs

Ingredients

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup skim milk
  • 1/2 cup honey (use a mild variety, can use more or less)
  • 2 tablespoons dried lavender flowers (edible flowers, they're available at penzeys)
  • 2 large eggs
  • 1/8 teaspoon salt (if you don't have 1/8 tsp, use 1/4 tsp and remove half the salt)

Recipe

  • 1 bring cream, milk, honey, and lavender just to a boil (150 degrees on a candy thermometer) in a 2-quart heavy saucepan over moderate heat. stir occasionally, remove pan from heat, and let the mixture steep, covered, for 30 minutes to an hour.
  • 2 pour mixture through a sieve into a bowl, apply pressure to the lavender buds to release all the liquid and then discard the lavender. reheat over moderate heat until hot (150 degrees).
  • 3 remove pan from heat for a moment and whisk eggs and salt in a small bowl (the cream mix will rewarm quickly and i find it best to take it off the heat to avoid ruining the ice cream).
  • 4 add 1/2 cup hot cream mixture (to the eggs/salt) in a slow stream, whisking constantly. return cream mix to medium-low heat, whisk the egg/cream mix back into the saucepan, and stir constantly until a candy thermometer reads 170 degrees (do not let it boil).
  • 5 pour through a sieve into a medium bowl and cool completely in the fridge (at least 3 hours).
  • 6 freeze in an ice cream maker. transfer ice cream to an airtight container and put in freezer to harden.
  • 7 notes: to chill more quickly, place the final mixture in an ice and cold-water bath for 30 minutes (a larger bowl for the ice water, a smaller bowl filled with the custard that will sit in the "bath"). stir frequently.

  • 1 tablespoon finely chopped onion
  • 1 teaspoon olive oil
  • 1 cup brown sugar
  • 3 tablespoons flour
  • 3 teaspoons ground mustard
  • 1 1/2 cups pineapple juice
  • 1 cup pineapple chunk
  • 1/2 cup vinegar
  • 1/2 cup soy sauce
  • 2 lbs lil' smokies

Recipe

  • 1 in a pan, heat oil over medium heat. saute onion until tender, about 5 minutes. remove from heat.
  • 2 in a large saucepan, combine onions, brown sugar, flour and mustard.
  • 3 gradually stir in pineapple juice and chunks, vinegar and soy sauce.
  • 4 bring to a boil over medium heat, stirring frequently.
  • 5 boil for 2 minutes, stirring constantly.
  • 6 add lil' smokies and stir to coat.
  • 7 serve in a crock pot set on warm.

Iced Winter Melon With Wine

Ingredients

  • Servings: 4
  • 1 medium ripe winter melon or 1 medium honeydew melon or 1 medium cantaloupe (if you prefer)
  • 1 cup port wine or 1 cup sherry wine or 1 cup marsala

Recipe

  • 1 cut a triangle in the stem end of the melon and remove seeds with a spoon.
  • 2 fill with wine, replace triangle and refrigerate 3 hours, taking care that the wine doesn't spill out.
  • 3 to serve, drain wine, cut melon into quarters (the long way), place a melon wedge on each plate and pour a bit more wine into the hollow of the melon (where the seeds were).

My Southern Grandma's Key Lime Pie

Ingredients

  • 8 inches graham cracker pie crust
  • 1 (14 ounce) can sweetened condensed milk, eagle brand
  • 1 large lime, juice and zest of (preferably a key lime, but not necessary)
  • 1 (9 ounce) container cool whip, softened
  • 1 (6 ounce) can frozen limeade concentrate
  • 4 drops green food coloring

Recipe

  • 1 use a large mixing bowl; grate rind (zest) of lime, add squeezed lime juice frozen limeade and sweetened condensed milk to the bowl. mix well.
  • 2 add cool whip; mix well again.
  • 3 spoon into prepared pie crust.
  • 4 swirl top with spoon.
  • 5 cover; chill overnight.
  • 6 keep chilled until serving.

Iced Raspberry Tea

Ingredients

  • Servings: 6
  • 2 cups red raspberries, fresh or frozen
  • 4 -5 tea bags (can use decaf)
  • 5 cups boiling water
  • ice cube
  • additional raspberries, for garnish (optional)
  • orange wedges or lime wedges or lemon wedge, for garnish (good) (optional)

Recipe

  • 1 place the raspberries and tea bags in a large glass bowl.
  • 2 pour the boiling water over the berries and tea bags; cover and let stand for 5 minutes.
  • 3 remove the tea bags; strain the berries from the mixture, then discard them.
  • 4 cool for a few hours.
  • 5 if desired, chill the tea.
  • 6 serve in tall glasses, with ice cubes, a few more berries, and a wedge or slice of orange, lemon, or lime, if desired.

Honey Ham With Mandarin Oranges

  • 8 lbs fully cooked bone in ham shank
  • 1/2 cup honey
  • 2 tablespoons dijon mustard

  • 1 preheat oven to 325.
  • 2 if ham has a skin peel it and try and leave 1/8 inch of fat.

  • 1 in bowl, dissolve sugar and gelatin in boiling water. refrigerate for one hour until cool.

  • 9 inches pie crusts
  • 6 peaches, peeled and halved
  • 1 cup whipping cream

  • 1 mix sugar and cornstarch together and spread 3/4 of it into pie crust.
  • 2 arrange peach halves on top, sprinkle with remaining sugar mixture.
  • 3 pour cream evenly over peaches.

Recipe

  • 1 in a large saucepan, combine the sugar with the water and ginger and bring to a boil, stirring until the sugar is dissolved. simmer over low heat, stirring occasionally, for 15 minutes longer. stir in the lime juice and simmer until syrupy, about 15 minutes. strain the syrup into jars and let cool completely before storing.

  • 1 medium yellow squash
  • 1 cup flour
  • 1 cup frying oil

Recipe

  • 1 wash squash thouroughly and dry. slice into 1/4 inch rounds. heat up the oil in a frying pan to medium.
  • 2 combine flour, pepper and parsley. dust squash rounds with flour.
  • 3 combine milk and egg and whish thoroughly.
  • 4 dip the dusted squash into the egg mixture and coat to cover all the flour.
  • 5 pat squash into the remaining flour and put into hot oil. fry til golden brown on the outside and cooked on the inside of squash. set cooked squash on paper towels to drain.
  • 6 sprinkle with kosher salt and serve hot.

Gram's Pickled Beets

Iced Turmeric Tea

Total Time: 12 mins Preparation Time: 2 mins Cook Time: 10 mins

Ingredients

  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground ginger
  • lemon juice (optional)

Recipe

  • 1 stir ground turmeric and ground ginger into a cup of boiling water.
  • 2 cool and pour over ice. turmeric may settle, just stir to mix.
  • 3 add lemon juice to taste.

Iced Melon With Rose Water

Ingredients

  • Servings: 2
  • 1 sweet melon (galia melon, honeydew melon or cantaloupe)
  • 2 tablespoons rose water
  • 1 teaspoon sugar
  • dried rose petals

Recipe

  • 1 cut the melon in halves and remove the seeds, collect the juice escaping. remove the flesh carefully without damaging the shells. cut into small cubes or thin slices.
  • 2 mix the flesh with the juice, the rose water and sugar. let it rest one hour.
  • 3 then fill it in the melon halves and place it in the freezer for about an hour.
  • 4 crush the rose petals and sprinkle them over the iced food.

Fried Yellow Plantains

Ingredients

  • 2 yellow plantains
  • 1/2 cup oil, for shallow frying
  • fresh chives, finely chopped, to garnish

Recipe

  • 1 with a small sharp knife, cut off both ends of the plantains, and cut in half.
  • 2 carefully slit just the skin along the natural ridges of each plantain.
  • 3 ease up the edge of the skin and run the tip of your thumb along the plantains, lifting the skin.
  • 4 gently peel away the skin and slice the plantains lengthwise. heat a little oil in a large frying pan and fry the plantain slices for 2-3 minutes on each side until golden brown.
  • 5 when brown and crisp, drain on paper towels and serve hot or cold, sprinkled with chives.

  • 250 ml lime cordial
  • 50 ml liquid sweetener

Recipe

  • 1 boil water and pour into 2 quart jug.
  • 2 add tea bags.
  • 3 steep until cooled.
  • 4 add lime cordial.
  • 5 add liquid sweetener to taste.
  • 6 when thoroughly cooled, pour into individual bottles and refrigerate until needed.
  • 7 pour into tall glass with ice, and enjoy.

Iced Lemon & Ginger Mint Tea

  • 4 bags mint tea
  • 8 slices ginger, thin,unpeeled
  • 1/2 cup whole fresh mint leaves
  • 1/2 cup sugar
  • 6 cups boiling water
  • 1/2 cup fresh lemon juice
  • 6 sprigs fresh mint (optional)

Recipe

  • 1 place tea bags, ginger, mint& sugar in saucepan.
  • 2 pour in boiling water, cover, and let stand 10 minutes.
  • 3 strain tea into large pitcher and stir in lemon.
  • 4 refrigerate until cold.
  • 5 pour into ice filled glasses and garnish with mint.

Lime Basil Sorbet

Ingredients

  • 1 1/2 cups sugar
  • 2 cups lime juice, fresh, divided (about 15 limes)
  • 1/2 cup light corn syrup
  • 3/4 cup basil leaves, packed, coarsely chopped
  • 2 cups water
  • 1 tablespoon lime rind, grated
  • lime rind, finely grated (optional)

Recipe

  • 1 combine sugar, 1 cup juice and corn syrup in a medium saucepan over medium-high heat. cook for 2 minutes or until sugar melts, stirring constantly. stir in basil. cook 30 seconds. remove from heat.
  • 2 pour mixture into a bowl. add remaining 1 cup juice, 2 cups water and 1 tbs. rind. cover and chill (approximately 2 hours or overnight).
  • 3 strain mixture through a fine seive; discard solids.
  • 4 pour mixture into a freezer can of an ice-cream freezer; freeze according to manufacturer's instructions.
  • 5 spoon mixture into a freezer-safe container; cover and freeze 1 hour or until firm.
  • 6 garnish servings with finely grated lime rind, if desired.

Ingredients

  • 2 quarts water
  • 1/2 cup water
  • 1 1/2 cups dried hibiscus flowers (1 1/2 ounces, see note above)
  • 1 cup sugar
  • ice cube

Recipe

  • 1 in a medium saucepan, combine water and hibiscus flowers and bring to a boil.
  • 2 simmer over moderate heat for 5 minutes.
  • 3 add sugar and stir until dissolved.
  • 4 pour the drink into a medium bowl. fill a larger bowl with ice water and set the smaller bowl inside.
  • 5 stir the drink occasionally until chilled, about 10 minutes. strain into a pitcher and serve in tall glasses over ice.

  • 3 tablespoons mayonnaise

Iced Louisiana Apricot Tea

Ingredients

  • Servings: 6
  • 4 orange pekoe tea bags
  • 2 sprigs fresh rosemary
  • 1 quart water, just-boiled
  • 1 1/3 cups apricot nectar
  • 6 fresh apricots, halved, pitted, sliced
  • 12 ounces sparkling water
  • 12 ice cubes

Recipe

  • 1 in a heatproof pitcher, pour just-boiled water over the tea bags & rosemary, & let steep for 10 minutes before removing & discarding the tea bags.
  • 2 let tea cool, then chill in the refrigerator for 1 hour before removing & discarding the rosemary.
  • 3 stir in the apricot nectar & apricots & pour into 6 tall glasses with 2 ice cubes in each glass.
  • 4 top each drink with some of the sparkling water & enjoy!

  • 4 cups sugar

Recipe

  • 1 place mint in boiling hot water.
  • 2 place zest of 1 lime in with mint.
  • 3 cut away skin and pith from limes and discard, place the sections of the lime in with the mint.
  • 4 steep for 20 minutes. strain squeezing out all the goodness into a heavy bottom pot. taste to see if the mint is strong enough, keeping in mind no sugar is added yet so it will be tart and tea like. if not add mint extract or creme de mint or both. add green food coloring for more intense green color.
  • 5 stir in pectin and bring to a a full rolling boil.
  • 6 add sugar and return to a full rolling boil. boil for 1 minute, stirring constantly.
  • 7 ladle into sterile jars leaving 1/4 inch head space. wipe rims clean and apply lids and bands.
  • 8 process in a hot water bath covered by 1-2 inches of water for 10 minutes.
  • 9 shut off flame for 5 minutes.
  • 10 remove without tilting the jars.
  • 11 set on a flat surface in a draft free place 12-24 hours.

  • 1 put the sugar in a heavy pan or small pot.
  • 2 add half the lemon juice and 1/2 cup water.
  • 3 cook over low heat, stirring, until the sugar has dissolved.
  • 4 increase heat and bring to a boil, stirring constantly for 2-3 minutes until the syrup is clear. set aside and let cool.
  • 5 slice the top off 4 oranges to make 'hats' (no more than a quarter of the orange).
  • 6 scoop out the flesh from both parts into a bowl.
  • 7 place the hollowed-out oranges into the freezer.
  • 8 grate the rind of the fifth orange and place the zest in the sugar syrup.
  • 9 juice the fifth orange into a second bowl. squeeze the juice out of the the flesh from the first four oranges into the bowl. (i did this by putting the pulp into a sieve and pressing it with the back of a wooden spoon). you should have 3 cups of juice - add more orange juice if necessary.
  • 10 add this to the syrup/zest. add the remaining lemon juice and adjust with further lemon juice or sugar to taste.
  • 11 pour this mixture into a shallow container and freeze for 3 hours.
  • 12 at this point, the mixture should not be frozen solid. use a fork or whisk to break up the ice to give a slushy mixture.
  • 13 freeze for another 3-4 hours.
  • 14 when ready to serve, pack the ice mixture into the oranges and top with the hats. use a toothpick to pin a bay leaf or flower to the top of each hat. serve immediately.

Frozen Blueberry Pie

Ingredients

  • Servings: 8
  • 20 ounces blueberries, approximately 4 cups
  • 4 ounces sugar, approximately 1/2 cup
  • 1/8 teaspoon kosher salt
  • 1 1/4 ounces tapioca flour, approximately 5 tablespoons
  • 1 tablespoon fresh orange juice
  • 1 teaspoon orange zest
  • 2 pie crusts (pre-made)
  • 1 egg yolk, whisked (mix with to egg mixture 1 teaspoon water added)

Recipe

  • 1 wash the berries and pat dry. mash up half of the blueberries in a small bowl.
  • 2 in a medium bowl, whisk together the sugar, salt and tapioca flour.
  • 3 add the mashed blueberries, orange juice and orange zest and stir to combine. let the mixture sit for 15 minutes. fold in the whole berries.
  • 4 line a 9-inch pie plate with aluminum foil. place the blueberry mixture into the foil and place in the freezer until solid, approximately 6 to 8 hours.
  • 5 once the filling is frozen, remove from the aluminum foil and wrap in plastic wrap and store in a freezer bag for up to 3 months.
  • 6 preheat the oven to 325 degrees f.
  • 7 unroll first piece of dough and place into a 9-inch pie pan, making sure the dough reaches to the lip of the pie pan. trim excess, if necessary. prick the bottom and sides with a fork and set aside.
  • 8 unroll second piece of dough and cut into 1 1/8-inch wide strips that are at least 10-inches long. using a ruler that is 1 1/8-inches wide, lay the ruler on the dough at 1 edge and roll across dough using the edge of the ruler as you go to cut through the dough.
  • 9 remove the frozen pie filling from the freezer and place into the prepared dough in the pan. lightly brush the edge of the crust with the egg yolk. lay 4 strips of dough across the top of the filling horizontally, leaving an even amount of space in between each strip.
  • 10 fold back 2 alternating strips and lay down another strip in the middle of the pie, perpendicular to the other strips. return the strips that are laid back to their original position.
  • 11 next, fold back the other 2 strips and lay down a strip to the left of the center perpendicular strip. return the strips that are laid back to their original position and repeat on the other side of the perpendicular strip, folding back the same 2 strips as you did on the other side. once you have a lattice, brush all the strips of dough with the egg yolk, trim excess dough and pinch strips and edge of crust in order to seal.
  • 12 place on the bottom rack of the oven and bake for about 1 hour 15 minutes. the pie should be bubbling lightly around the edges. if the lattice is not browned enough in the center, place under the broiler for 1 to 2 minutes.
  • 13 place the pie on a rack and allow to cool to room temperature before serving, approximately 1 1/2 to 2 hours.

Frozen Blueberry Yogurt Pie

  • 1 (8 ounce) container frozen non-dairy topping, thawed
  • 2 cups frozen blueberries, thawed
  • 1 pie crust (9-inch)

Recipe

  • 1 in medium bowl bowl fold blueberry yogurt into whipped topping. reserve 18 whole blueberries. coarsely chop remaining blueberries. fold chopped blueberries into yogurt mixture.
  • 2 spread in crust. top with reserved blueberries. freeze at least 4 hours or until firm.
  • 3 let stand at room temperature for 15 minutes before cutting. garnish as desired. store in freezer.

Honey Balsamic Vinaigrette

  • 16 ounces sugar

  • 1 tablespoon vanilla
  • 1/2 cup sugar

Recipe

  • 1 heat 1/2 cup sugar in a heavy skillet or saucepan, stirring constantly until it melts and turns a dark golden color.
  • 2 remove from heat and immediately pour into a 4 1/2 cup metal ring mold, swish it around so it evenly coats the bottom of the ring mold.
  • 3 in a saucepan mix milk and sugar and simmer for 1 hour.
  • 4 let it cool.
  • 5 mix eggs, egg yolks and vanilla. add to the cooled milk and pour on the ring mold.
  • 6 place ring mold in another pan and place on an oven rack. pour water on the pan around the ring mold to a depth of 1 inch.
  • 7 bake at 325ffor close to l hour or until a knife comes out clean.
  • 8 cool flan and chill for at least 3 hours.
  • 9 to un-mold the flan loosen edges with a spatula, slip spatula down the sides to let air inches
  • 10 place the serving platter over the mold and flip to allow the flan to slip onto the platter.
  • 11 spoon the caramel that may remain in the mold on top of the flan.

Recipe

  • 1 pineapple ice.
  • 2 in a freezer-proof 13"x9" pan, mix pineapple juice and crushed pineapple (with juice). freeze overnight.
  • 3 green rim:.
  • 4 mix 2 parts green decorating sugar to 1 part kosher salt.
  • 5 dip rims of 8 margarita glasses into water, shaking off excess; dip into sugar mixture.
  • 6 drink:.
  • 7 in blender, puree tequila, triple sec and 1/2 cup basil leaves until basil is finely chopped; strain into bowl.
  • 8 stir in frozen margarita mix. transfer half of mixture to blender.
  • 9 break pineapple ice mixture into 1" pieces; add half to blender.
  • 10 process until smooth. transfer to pitcher.
  • 11 repeat with remaining tequila and pineapple mixtures.
  • 12 divide among 8 prepared margarita glasses.

  • 1 (1/4 ounce) package unflavored gelatin
  • 1/4 cup water
  • 4 large egg yolks, slightly beaten
  • 2/3 cup sugar
  • 1/2 cup freshly squeezed lime juice
  • 2 teaspoons lime zest
  • 1/4 teaspoon salt
  • 2 -3 drops green food coloring
  • 4 cups whipped topping (cool whip)
  • lime peel, twists (optional)

Recipe

  • 1 prepare and bake single pie crust according to recipe directions, using a 9-inch pie plate; cool.
  • 2 sprinkle gelatin over the water in a glass measuring cup.
  • 3 whisk together egg yolks, sugar, lime juice, lime peel and salt in small saucepan over medium heat until slightly thickened. remove from heat.
  • 4 stir reserved gelatin and add it to the filling mixture, whisking until smooth. whisk in food coloring, one drop at a time, until desired color is achieved. cover saucepan with plastic wrap and refrigerate filling until partially set.
  • 5 using a rubber spatula or wooden spoon, gently stir whipped topping into cooled gelatin mixture. transfer filling mixture to baked pie crust, then refrigerate until firm. before serving, garnish with lime peel.

  • 1 tablespoon whey (i use the whey from nancy's plain yogurt)

Recipe

  • 1 *note: my husband tested this recipe using extra virgin olive oil as indicated in the original recipe. he found the olive oil gave the mayonnaise an overly "olive-y" taste. he prefers the safflower or sunflower oil and will sometimes substitute a little bit of olive oil-roughly a ratio of 3/4 safflower oil to 1/4 extra virgin olive oil.
  • 2 in a food processor, place egg yolks, mustard and salt. process the mixture until well blended, about 30 seconds.
  • 3 with the motor running, <<slowly>> in a thin, steady stream, drizzle the safflower oil or sunflower oil through the feed tube. next, add the lemon juice and whey.
  • 4 taste and correct seasoning if necessary. (usually the mayo will call for either more salt or more lemon juice or even both ingredients.).
  • 5 allow mayonnaise to sit at room temperature, well covered, for 7 hours before refrigerating.

  • 2 when ready to serve, whip remaining cream. remove paper collar and decorate top with whipped cream and optional lime slices and crushed pistachios, crystallized violets.

  • 25 g dairy-free margarine
  • 1 tablespoon golden syrup
  • 1 egg, lightly beaten

Recipe

  • 1 place the pears, cashews, flour and brown sugar in a bowl and mix together.
  • 2 place the margarine and golden syrup in a small saucepan and stir over low heat until melted.
  • 3 gently stir golden syrup mixture and egg into the pear mixture.
  • 4 pour the mixture into a lightly greased 20cm square tin and bake for 35-40 minutes at 180°c, or until golden and cooked through. leave to cool in the tin before slicing.

Madzoon -armenian Yogurt

Ingredients

  • 1 quart homogenized milk
  • 1/4 cup yogurt (starter)
  • 1/2 pint heavy cream

Recipe

  • 1 pour the milk into a saucepan and bring to a boil, stirring constantly.
  • 2 when it comes to a boil, add 1/2 pint of heavy cream, and pour into an earthen bowl or pyrex dish.
  • 3 when it is lukewarm, stir the madzoon starter with a spoon until it is smooth and dilute it with some of the warm milk.
  • 4 pour this mixture into warm milk and stir.
  • 5 set your oven to 200f degrees.
  • 6 when heated, turn off oven and place bowl in oven.
  • 7 check in 2 hours for firmness.
  • 8 variation: use skim milk instead of whole milk and eliminate cream.
  • 9 note: you may use commercial plain yogurt as your starter.
