Rotel Rice

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 2 1/2 cups uncooked rice
  • 1 (8 ounce) can rotel, undrained
  • 2 1/2 cups vegetable broth (see step 2 below)

Recipe

  • 1 drain rotel, reserving liquid.
  • 2 add vegetable broth or water to rotel juice to make 3 cups of liquid.
  • 3 combine rice, rotel and liquid in large saucepan. cover and bring to a boil. reduce heat to the lowest setting and simmer 20 minutes. (don't open the lid!).
  • 4 fluff rice with fork before serving.
