Shrimp Toast

Ingredients
- 1/2 lb shrimp (fresh or frozen)
- 1/2 cup chopped green onion (with tops)
- 1/4 cup all-purpose flour
- 1/4 cup water
- 1 egg
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 1/4 teaspoon sugar
- 1/4 teaspoon sesame oil
- 1 dash pepper
- vegetable oil
- 5 slices bread
Recipe
- 1 peel shrimp. (if shrimp is frozen, do not thaw; peel under running cold water.)
- 2 make a shallow cut lengthwise down back of each shrimp; wash out sand vein.
- 3 cut shrimp lengthwise into halves; cut crosswise into halves.
- 4 mix shrimp, green onions, flour, water, egg, cornstarch, salt, sugar, sesame oil and pepper.
- 5 heat vegetable oil (1 1/2 inches) in wok to 350ºf.
- 6 remove crusts from bread; cut each slice into 4 squares.
- 7 place 1 or 2 pieces shrimp with sauce on each bread square.
- 8 fry 5 squares at a time until golden brown, turning frequently, about 2 minutes.
- 9 drain on paper towel.

- 11 prepare shrimp toast; cover and refrigerate no longer than 24 hours.
- 12 just before serving, heat uncovered in 400ºf oven until hot, 12 to 15 minutes. drain on paper towel.
