Shrimp With Garlic And Toasted Bread Crumbs

Ingredients

- 1 cup fresh breadcrumb (from italian or french bread)
- 1/3 cup fresh flat-leaf parsley, minced
- 1 large garlic clove, finely chopped
- salt
- pepper
- 1/4 cup olive oil
- 1 1/2 lbs large shrimp, peeled, deveined
- lemon wedge, to garnish
Recipe
- 1 preheat oven to 450 degrees.
- 2 lightly oil a large baking sheet.
- 3 in a medium bowl, combine bread crumbs, parsley, garlic, and salt and pepper to taste.
- 4 add 3 tablespoons oil or enough to moisten the crumbs.
- 5 arrange the shrimp on a single layer on the baking sheet, curling each one into a circle.
- 6 spoon a little of the crumb mixture each shrimp and drizzle with a little more oil.
- 7 bake 10-15 minutes, depending on the size of the shrimp, or until the shrimp turn pink and the crumbs are lightly browned.
- 8 serve with lots of lemon wedges.
