Shrimp Toast

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • 1 lb shrimp, shelled and de-veined
  • 1 teaspoon salt
  • 1 egg, beaten
  • 6 slices bread, crust removed
  • 1 small onion, grated
  • 1/4 teaspoon pepper
  • 1 teaspoon all-purpose flour
  • peanut oil (for frying)

Recipe

  • 1 chop the shrimp very fine and add the grated onion. mix with the salt, pepper, egg and flour. cut each slice of bread in to four triangles and spread the shrimp filling over one side of each slice of bread. fry in a skillet in the hot oil turning as needed. be sure that there is enough oil in the skillet so that the toasts float and don't stick to the bottom of the pan.
  • 2 these may be made ahead and frozen before frying. do not thaw before frying.
