Shrimp With Cannellini Bean Salad

Ingredients

- 1 1/2 lbs large shrimp, shelled and deveined
- 1/2 cup olive oil
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1 small onion, minced
- 1 tablespoon flat leaf parsley, chopped
- 1 1/2 teaspoons dried sage
- 1 tablespoon vinegar
- 1/4 teaspoon black pepper
- 2 (15 ounce) cans cannellini beans, drained and rinsed
Recipe
- 1 light the grill or heat the broiler. thread the shrimp four skewers.
- 2 in a shallow glass dish, combine ¼ cup of the oil with the garlic and ¼ teaspoon of the salt.
- 3 add the skewers and turn to coat the shrimp. set aside.
- 4 in a medium bowl, combine the onion with remaining oil and salt, parsley, sage, vinegar and pepper. gently stir in the beans.
- 5 grill or broil the shrimp, turning once, until just done, about 5 minutes. serve the shrimp with the bean salad.
