Shrimp With Cannellini Bean Salad

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs large shrimp, shelled and deveined
  • 1/2 cup olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1 small onion, minced
  • 1 tablespoon flat leaf parsley, chopped
  • 1 1/2 teaspoons dried sage
  • 1 tablespoon vinegar
  • 1/4 teaspoon black pepper
  • 2 (15 ounce) cans cannellini beans, drained and rinsed

Recipe

  • 1 light the grill or heat the broiler. thread the shrimp four skewers.
  • 2 in a shallow glass dish, combine ¼ cup of the oil with the garlic and ¼ teaspoon of the salt.
  • 3 add the skewers and turn to coat the shrimp. set aside.
  • 4 in a medium bowl, combine the onion with remaining oil and salt, parsley, sage, vinegar and pepper. gently stir in the beans.
  • 5 grill or broil the shrimp, turning once, until just done, about 5 minutes. serve the shrimp with the bean salad.
