Perculator Punch

Ingredients
- 9 cups apple cider
- 1/2 cup red-hot candies
Recipe
- 1 pour apple cider into a percolator.
- 2 place candies in percolator basket.
- 3 cover, and begin the perking cycle.
- 4 when the cycle is complete; remove the basket, and leave punch in the pot to keep warm.

Kalamaria Toursi (pickled Calamari)

Ingredients
- Servings: 4
- 1 lb small squid
- 1 teaspoon salt
- 4 bay leaves
- 4 sprigs fresh oregano
- 10 whole black peppercorns
- 2 teaspoons coriander seeds
- 1 small fresh red chili, halved and seeded
- 2 1/2 cups good quality wine vinegar
- 2 -3 tablespoons olive oil
Recipe
- 1 clean squid (see directions at bottom of instructions). cut squid into 3/8 inch rings.
- 2 place 8 cups water, salt and one bay leaf in a large saucepan. bring to a boil and add the calamari. reduce heat and simmer for 5 minutes. drain and dry well.
- 3 pack the squid rings in a clean dry 2 cup jar with a sealing lid. add the oregano, peppercorns, coriander seeds, chili and remaining bay leaves.
- 4 cover completely with the vinegar then gently pour in enough olive oil to cover by 3/4 inch. seal and refrigerate for one week.
- 5 when ready to serve, remove from the marinade, place on a serving dish and garnish with lemon wedges and chopped fresh parsley.
- 6 to clean a jar: wash the jar and lid in hot soapy water, rinse well in hot water and then dry in a very slow 250f oven for 20 minutes. do not use a towel to dry the jar.
- 7 to clean squid: grasp each squid body in one hand and the head and tentacles in the other. pull apart to separate them. cut the tentacles from the head by cutting below the eyes. discard the head. push out the beak and discard. pull the quill from inside the body and discard. under cold running water, pull away the skin. you can use the flaps.

- 1 hardboil your eggs normally.
- 2 when they are cool enough to handle, roll them around on a hard surface to crack them. try not to break the membrane. develop a nice overall cracked look.

- 4 you could make really cool looking deviled eggs with these.

- 1 place the first three ingredients in a bowl and stir to blend.
- 2 add cream and whisk until light and thick.
- 3 pour into individual dishes and chill.
- 4 serves 4.

- 2/3 cup imperial margarine, softened
- 2 1/2 cups granulated sugar
- 2 1/3 cups all-purpose flour
- 4 eggs
- 1/3 cup fresh lemon juice
- 2 tablespoons grated lemon peel
- confectioners' sugar
Recipe
- 1 preheat oven to 350°f.
- 2 line 13x9-inch baking pan with aluminum foil, then spray with nonstick cooking spray; set aside.
- 3 in large bowl, with electric mixer, beat imperial spread and 1/2 cup granulated sugar until light and fluffy, about 3 minutes.
- 4 beat in 2 cups flour until fine crumbs form.
- 5 press into prepared pan. bake uncovered 20 minutes.
- 6 meanwhile, in medium bowl, with electric mixer, beat eggs, remaining 2 cups granulated sugar, remaining 1/3 cup flour, lemon juice and lemon peel 4 minutes or until light and fluffy; pour over hot baked crust.

- 8 on wire rack, cool completely.
- 9 using foil, lift out of pan. spray knife with nonstick cooking spray and cut into triangles.
- 10 to serve, sprinkle generously with confectioner's sugar.
Lemon Verbena And Mint Tea - French Verveine And Mint Tisane

- 1 combine frosting mix(dry), corn syrup, vanilla and boiling water in a small bowl.
- 2 beat on highest speed until stiff peaks form, about 5 minutes.
- 3 transfer to a large mixing bowl, on low speed gradually blend in sugar.
- 4 stir in nuts.
- 5 drop by spoonfuls on wax paper.
- 6 when outside of candy feels firm, turn over and allow to dry at least 12 hours.
- 7 store in an air tight container.

- 1 place egg in a bowl & beat in enough icing sugar to give a stiff spreadable consistency, cover icing with a damp cloth.
- 2 stack 3 cones together using a little icing between each, repeat with remaining cones.
- 3 starting at the base of the cone spread icing over 1/3 cone and place a row of mint leaves around the base, overlapping the 1st layer.
- 4 spread remaining cone with icing & continue arranging rows of mint leaves around the cone until about 6 or 7 rows are formed leaving a little space at the top.
- 5 repeat this procedure with remaining cones, icing & leaves.
- 6 cover top with silver cachous & sprinkle with a little extra icing sugar.
Mini Lemon Cream Pies (no Bake)

- 2 top with approximately 1/4 cup+ of vanilla yogurt- so the lemon curd is covered but yogurt isn't spilling over the edges.

- 2 1/2 kg sugar (12 cups)
- 6 cups plain flour
- 6 teaspoons baking powder
- 125 g margarine
- 2 eggs
- 125 ml evaporated milk
- 312 ml lukewarm water
- 1 pinch salt

- 1 syrup:.
- 2 1. boil well 3 cups of water with the ginger.
- 3 2. remove the ginger and add 3 more cups of water.
- 4 3. bring to boil again.
- 5 4. then add 2.5 kgs (12 cups) of sugar and allow to boil for 5 minutes.
- 6 5. put in fridge and leave overnight.
- 7 dough:.
- 8 1. mix all the ingredients together and knead well and then leave to rest.
- 9 2. roll the dough flat into an oval/square until it is 5mm thick.
- 10 3. cut the dough into strips 2.5cm across.
- 11 4. then cut these strips into lengths of 6cm. (so you are left with a whole bunch of rectangles 2.5cm x 6cm.).
- 12 5. then make two cuts along the length of the rectangles so that you can braid them. what you're aiming at is the same braid in a scout's toggle. (or similar to a girl's 3-strand braid in her hair.).
- 13 6. when you're finished you should have a whole bunch of braided dough pastries ready to be boiled in oil --
- 14 7. cook these in hot oil until golden brown and crisp.
- 15 8. dip the whole cooked koeksuster immediately into your cool syrup that you've hauled out the fridge.
- 16 9. remove from the syrup and allow to cool (on a newspaper or kitchen towel) before eating.
- 17 10. don't eat too many!
Kale For Kids (and Grownups Too!)

- 2 -3 tablespoons olive oil
- 1 -2 tablespoon mirin (japanese sweet cooking sherry)

- 1 wash the kale, cut the leaves from the center stem/rib, and chop roughly (the center stem is tough so you want to get the leaf off).
- 2 put the kale in a large (12") frying pan, add the olive oil, mirin, and salt (the measurements are rough because i usually just pour long splashes of each on top of the kale) and turn up the heat to medium/ medium high.
- 3 cook, covered, stirring occasionally, until tender (usually takes about 10-12 minutes, depending on the heat). taste, and add salt if needed (if kale is very bitter occasionally i'll add a little brown sugar).

Mr. Gokittengo's Nutella Crescents

- 1 (10 1/8 ounce) package pillsbury big & flaky refrigerated crescent dinner rolls
- 3 tablespoons nutella, approximately 1/2 tablespoon per crescent roll

- 1 preheat the oven to 350 degreen farenheit, or whatever temperature is called for on the can of crescent rolls.
- 2 unroll the crescent rolls per package instructions.
- 3 put about 1/2 tablespoon of nutella on the large end of each roll.
- 4 roll them up.
- 5 bake for the amount of time specified in the package directions, about 15 to 20 minutes.
- 6 let cool for about five minutes before attempting to eat - the nutella is like lava when they first come out of the oven, and will hurt you. i speak from experience.

- 1 (1 5/8 ounce) package ball simple creations no cook freezer jam pectin
- 1 1/2 cups sugar or 1 1/2 cups splenda granular
- 4 cups fresh fruit (see note) or 4 cups frozen fruit (see note)

- 1 stir sugar and contents of package in a bowl until well blended.
- 2 add 4 cups crushed fruit (for peaches, reduce to 3 1/2 cups). stir 3 minutes.
- 3 ladle jam into clean plastic (or glass)freezer jars.
- 4 twist on lids and let stand until thickened, about 30 minutes.
- 5 refrigerate up to 3 weeks or freeze up to 1 year.

No Fail Custard Pie

Ingredients

- 2 cups milk
- 3/4 cup sugar
- 1/2 cup margarine
- 4 eggs
- 1 dash salt
- 1 teaspoon vanilla
- 1/2 cup bisquick
Recipe
- 1 combine all ingredients in a blender and mix well.
- 2 pour into greased large pie plate.
- 3 bake at 400 degrees for 10 minutes.
- 4 reduce heat to 325 degrees and bake another 30 minutes, or until set.
- 5 cool before serving.

- 1 preheat oven to 110°c.
- 2 cover a baking sheet with baking paper.
- 3 place all ingredients in a large ziplock bag. shake until each piece of kale is coated with the oil and salt.
- 4 place the kale pieces on the baking sheet. bake 10 minutes, turn the pieces, bake 10 more minutes.

Italian Ice

Ingredients
- Servings: 10
- 1 tablespoon lemon juice
- 2 -4 tablespoons honey or 2 -4 tablespoons granulated sugar
- 3 cups fresh fruit (strawberries, blueberries, pineapple)
- 3 cups ice
Recipe
- 1 to the bowl of a food processor or high powered blender, add the fruit, honey or sugar (i used 2 tablespoons honey), lemon juice, and 2 cups ice. blend the mixture until chunky and then add the remaining 1 cup of ice. blend until completely smooth.
- 2 pour the mixture into a 9- by 13-inch baking dish and place in the freezer for 30 minutes. after 30 minutes remove the ice from the freezer and scrape it with a fork until slushy. return to the freezer for another 2 hours.
- 3 after 2 hours, you can then scoop the ice into cups. if the ice is too hard to scoop, let it sit out for 5 minutes to soften, or add the ice to a blender and blend until slushy. scoop into cups.
Lemon Thyme Sorbet

- 1 cup sugar
- 3 cups water
- 4 fresh lemons, juice of and thinly-pared rind (about 1/2 cup fresh lemon juice)
- 8 -12 sprigs of fresh lemon thyme (about 8 tablespoons or 1/2 cup)
- 1 egg , stiffly beaten (optional)
Recipe
- 1 bring the sugar, water, and lemon rind to a boil in a heavy saucepan over medium-high heat. boil briskly, without stirring, for 5 minutes until sugar is dissolved, pushing any crystals that form on the sides of the pan back down into the water. then reduce heat to a simmer, give a good stir, and simmer for 5 minutes longer.
- 2 remove from heat. add the thyme leaves to the syrup, cover, and leave to steep for 1 hour.
- 3 strain through a fine-mesh sieve, discarding the lemon rind and thyme leaves. stir in the lemon juice. cover and refrigerate until thoroughly chilled. transfer to an ice-cream maker and freeze according to the manufacturer's instructions.
- 4 if you don't have an ice-cream maker, transfer the mixture to a freezer-proof container. freeze for one hour, then beat thoroughly with a hand-held mixer (at this point, add the beaten egg for a lighter texture). repeat twice more.
- 5 use a melon-baller to scoop into pretty dessert glasses. the sorbet should be served as soon as it is made.

Peppers With Cayenne And Cilantro

Recipe
- 1 combine plums with 1/4 cup sugar. mash. let sit in refrigerator for 1 hour. you can then puree them or not. i liked them better pureed.
- 2 beat eggs with 3/4 cup sugar until foamy.
- 3 beat in cream and milk.
- 4 if you're using mashed plums strain the juice into the cream mix and add the pulp when the ice cream is almost done. if using pureed plums add it all to the cream mix.
- 5 freeze in ice cream maker.

Plum Jam With Lime And Ginger

- 2 limes, juice of
- 2 limes, zest of (finely grated)
- 3 tablespoons grated gingerroot

- 1 place all ingredients in pot and bring to a boil.
- 2 boil rapidly to almost the jelling point.
- 3 this will be where you are stirring as it is still boiling for 15 minutes.

Recipe
- 1 in a saucepan over low heat combine water and 2 tablespoons sugar, swirling occasionally until sugar dissolves. increase heat and bring to a boil. adjust heat so liquid barely shimmers.
- 2 add plums to pan and cook for 3-5 minutes (or until tender). cool completely.
- 3 in a saucepan bring cream, milk and vanilla beans to a simmer. remove from heat and let stand 10 minutes.
- 4 scrape seeds from vanilla beans into the cream mixture, discarding pods. return mixture to a boil. remove from heat.
- 5 beat egg yolks and 2/3 cup sugar until pale yellow and then beat in hot milk mixture. return all to saucepan and cook stirring over medium low heat until mixture thickens (6-8 minutes). do not boil. strain mixture into a bowl. cool completely in a refrigerator (at least 4 hours), stirring occasionally.
