Kolotny Borscht

Ingredients

- 3 cucumbers, peeled seeded and grated
- 3 celery ribs, chopped
- 8 radishes, grated
- 6 scallions, chopped
- 2 cups ice cubes
- 2 cups half-and-half
- 1/2 cup vinegar
- 1/2 cup water
- 3 hard-boiled eggs
- salt and pepper, to taste
Recipe
- 1 place cucumbers, celery, radushes, and scallions in a medium bowl.
- 2 cover with ice cubes and refrigerate 1-2 hours until veggies are crisp.
- 3 remove any unmelted ice cubes.
- 4 add half-andhalf, vingar, water, eggs. stir to combine.
- 5 season to taste with salt and pepper. serve immediately.
