Kolotny Borscht

Total Time: 2 hrs Preparation Time: 2 hrs

Ingredients

  • Servings: 4
  • 3 cucumbers, peeled seeded and grated
  • 3 celery ribs, chopped
  • 8 radishes, grated
  • 6 scallions, chopped
  • 2 cups ice cubes
  • 2 cups half-and-half
  • 1/2 cup vinegar
  • 1/2 cup water
  • 3 hard-boiled eggs
  • salt and pepper, to taste

Recipe

  • 1 place cucumbers, celery, radushes, and scallions in a medium bowl.
  • 2 cover with ice cubes and refrigerate 1-2 hours until veggies are crisp.
  • 3 remove any unmelted ice cubes.
  • 4 add half-andhalf, vingar, water, eggs. stir to combine.
  • 5 season to taste with salt and pepper. serve immediately.
