Rosy Beet Napa Cabbage Slaw

Ingredients

  • Servings: 4
  • 6 cups thinly sliced napa cabbage
  • 1 1/2 cups chopped red onions
  • 2 medium beets, grated
  • 1 cup chopped fresh parsley
  • 1/4 cup red vinegar
  • 1/2 cup water
  • 2 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1/3 cup chopped fresh dill
  • 3 tablespoons chopped fresh chives
  • 1/2 cup low-fat sour cream
  • salt & freshly ground black pepper

Recipe

  • 1 combine vegetables and parsley in a large bowl.
  • 2 in a saucepan, combine vinegar, water, sugar and salt. bring to a boil, stirring until sugar is dissolved.
  • 3 pour over vegetables and toss.
  • 4 add dill and chives and mix in well.
  • 5 cover and marinate overnight.
  • 6 stir well. just before serving, drain off excess liquid.
  • 7 stir in sour cream and salt and pepper to taste.
