Rosy Beet Napa Cabbage Slaw

Ingredients

- 6 cups thinly sliced napa cabbage
- 1 1/2 cups chopped red onions
- 2 medium beets, grated
- 1 cup chopped fresh parsley
- 1/4 cup red vinegar
- 1/2 cup water
- 2 tablespoons brown sugar
- 1/2 teaspoon salt
- 1/3 cup chopped fresh dill
- 3 tablespoons chopped fresh chives
- 1/2 cup low-fat sour cream
- salt & freshly ground black pepper
Recipe
- 1 combine vegetables and parsley in a large bowl.
- 2 in a saucepan, combine vinegar, water, sugar and salt. bring to a boil, stirring until sugar is dissolved.
- 3 pour over vegetables and toss.
- 4 add dill and chives and mix in well.
- 5 cover and marinate overnight.
- 6 stir well. just before serving, drain off excess liquid.
- 7 stir in sour cream and salt and pepper to taste.
