Rosy As A Poesy Cake

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 2 cups all-purpose flour
  • 1/8 cup granulated sugar
  • 2/3 cup cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 cup milk (2% preferred)
  • 1/2 cup ketchup
  • 1/2 cup shortening
  • 1 teaspoon vanilla
  • 2 eggs

Recipe

  • 1 in a large mixing bowl combine flour, sugar, cocoa, baking soda, baking powder, cinnamon & salt.
  • 2 add milk, ketchup shortening and vanilla.
  • 3 beat at low speed with electric mixer until 'just' combined.
  • 4 add the eggs and beat at mediumn speed for 2 minutes.
  • 5 spread batter evenly in greased and (if desired - floured) 9x13 baking pan.
  • 6 bake in preheated 350degree oven, 30-35 minutes or until cake tester inserted in the centre comes out clean.
  • 7 cool and then frost with your favourite chocolate frosting or (when cake is completely cooled off) dust with confectioners sugar.
  • 8 chocolate or vanilla frosting is recommended.
