Rosy As A Poesy Cake

Ingredients
- 2 cups all-purpose flour
- 1/8 cup granulated sugar
- 2/3 cup cocoa powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 cup milk (2% preferred)
- 1/2 cup ketchup
- 1/2 cup shortening
- 1 teaspoon vanilla
- 2 eggs
Recipe
- 1 in a large mixing bowl combine flour, sugar, cocoa, baking soda, baking powder, cinnamon & salt.
- 2 add milk, ketchup shortening and vanilla.
- 3 beat at low speed with electric mixer until 'just' combined.
- 4 add the eggs and beat at mediumn speed for 2 minutes.
- 5 spread batter evenly in greased and (if desired - floured) 9x13 baking pan.
- 6 bake in preheated 350degree oven, 30-35 minutes or until cake tester inserted in the centre comes out clean.
- 7 cool and then frost with your favourite chocolate frosting or (when cake is completely cooled off) dust with confectioners sugar.
- 8 chocolate or vanilla frosting is recommended.
