Sesame Shrimp With Fried Rice

Ingredients

- 3/4 cup uncooked rice
- 4 tablespoons sesame oil (divided in half)
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons teriyaki sauce
- 2 teaspoons fresh lemon juice
- 2 tablespoons soy sauce
- 2 green onions, thinly sliced
- 1 tablespoon sesame seeds
Recipe
- 1 in a medium saucepan combine rice and 1.5 cups water. bring to boiling. reduce heat to low; simmer, covered, 20 minutes or until rice is tender and all of the water is absorbed.
- 2 in a large skillet heat 2 tablespoons of the sesame oil over medium-high heat. add shrimp, teriyaki sauce, lemon juice, and salt and pepper to taste. simmer 3-5 minutes or until shrimp are opaque. remove shrimp and sauce from skillet; set aside.
- 3 add remaining 2 tablespoons of sesame oil to skillet. add cooked rice, soy sauce, green onions and sesame seeds; cook until browned on bottom, stirring occasionally. once rice sticks to bottom of skillet, loosen and turn with a spatula.
- 4 spoon shrimp and sauce over fried rice. sprinkle with additional sesame seeds, if desired, and serve.
