Sesame Whole Wheat Soda Bread

Ingredients
- 2 1/2 cups whole wheat flour
- 1 -1 1/3 cup flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons salt
- 2 tablespoons light brown sugar
- 1/4 cup butter
- 2/3 cup rolled oats
- 1/4 cup sesame seeds, toasted
- 1 1/3 cups buttermilk
Recipe
- 1 combine the first 5 dry ingredients except for 1/3 cup of the flour.
- 2 add the butter, cut into bits, and cut into the dry mixture until it resembles coarse meal.
- 3 add oats and sesame seeds and mix again.
- 4 add the buttermilk gradually.
- 5 stir until it all forms a ball.
- 6 turn the dough out on a floured surface.
- 7 knead in the reserved flour, as much as needed to make a soft dough.
- 8 divide dough into fourths.
- 9 shape each quarter into a round mini-loaf and flatten just a bit.
- 10 spray baking sheet with cooking spray and arrange mini loaves.
- 11 cut the top of each loaf with a shallow "x".
- 12 if you wish, you may brush the tops with more buttermilk and sprinkle with more sesame seeds.
- 13 bake at 425 for 15-20 minutes, until lightly browned.
- 14 cool and serve.
