Sesame Whole Wheat Soda Bread

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • 2 1/2 cups whole wheat flour
  • 1 -1 1/3 cup flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons salt
  • 2 tablespoons light brown sugar
  • 1/4 cup butter
  • 2/3 cup rolled oats
  • 1/4 cup sesame seeds, toasted
  • 1 1/3 cups buttermilk

Recipe

  • 1 combine the first 5 dry ingredients except for 1/3 cup of the flour.
  • 2 add the butter, cut into bits, and cut into the dry mixture until it resembles coarse meal.
  • 3 add oats and sesame seeds and mix again.
  • 4 add the buttermilk gradually.
  • 5 stir until it all forms a ball.
  • 6 turn the dough out on a floured surface.
  • 7 knead in the reserved flour, as much as needed to make a soft dough.
  • 8 divide dough into fourths.
  • 9 shape each quarter into a round mini-loaf and flatten just a bit.
  • 10 spray baking sheet with cooking spray and arrange mini loaves.
  • 11 cut the top of each loaf with a shallow "x".
  • 12 if you wish, you may brush the tops with more buttermilk and sprinkle with more sesame seeds.
  • 13 bake at 425 for 15-20 minutes, until lightly browned.
  • 14 cool and serve.
