Sesame Soba Noodles

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 8 ounces soba noodles
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 garlic clove, pressed
  • 1 teaspoon grated ginger
  • 2 green onions, thinly sliced
  • 2 tablespoons chopped fresh cilantro leaves
  • 1 teaspoon sesame seeds
  • 2 hard-boiled eggs, sliced lengthwise, for serving

Recipe

  • 1 in a large pot of boiling water, cook noodles according to package instructions. rinse under cold water and drain; set aside.
  • 2 in a small bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, garlic and ginger.
  • 3 in a large bowl, combine noodles, rice vinegar mixture, green onions, cilantro and sesame seeds.
  • 4 serve immediately, garnished with eggs, if desired.
