Sesame Noodle Soup With Vegetables

Ingredients

  • Servings: 4
  • 1/2 cup sliced green onion
  • 4 garlic cloves, minced
  • 1 tablespoon sesame oil
  • 2 1/2 cups thinly sliced napa cabbage
  • 1 cup chopped red bell pepper
  • 1 cup julienned carrot
  • 1 cup sliced cremini mushrooms or 1 cup shiitake mushroom
  • 3 (14 ounce) cans vegetable broth
  • 12 ounces fresh chinese noodles
  • salt and pepper

Recipe

  • 1 saute green onions and garlic in sesame oil until tender, about 5 minutes.
  • 2 add cabbage, bell pepper, carrots and mushrooms and saute until vegetables are crisp-tender, about 5 minutes.
  • 3 add vegetable broth to saucepan; heat to boiling.
  • 4 stir in noodles; return to boiling.
  • 5 reduce heat and simmer, uncovered, until noodles are just tender, 1-2 minutes. season to taste with salt and pepper.
