Sesame Noodles With Ginger And Scallions

Ingredients

- 1/2 lb angel hair pasta
- 1 tablespoon olive oil
- 3 1/2 tablespoons minced fresh ginger
- 1/2 cup minced scallion, part only
- 1 1/2 cups scallion tops, cut into 1/4-in . pieces
- 2 tablespoons rice
- 2 cups bean sprouts
- 1 1/2 tablespoons sesame seeds, toasted until golden in dry pan
- 3 1/2 tablespoons soy sauce (or bragg)
- 1 1/2 tablespoons toasted sesame oil
- 3/4 tablespoon sugar
- 1 dash black pepper
- 1 1/2 tablespoons rice vinegar
Recipe
- 1 mix dressing and set aside.
- 2 cook noodles until tender (about 8 minutes), rinse, and drain.
- 3 heat wok or heavy skillet over high heat.
- 4 add oil and heat about 15 seconds.
- 5 add ginger and scallion whites, stir about 20 seconds.
- 6 add greens, rice , and bean sprouts.
- 7 toss lightly about 1 minute.
- 8 add cooked noodles and dressing and continue tossing until noodles are fully heated.
- 9 add sesame seeds.
- 10 dress with a few more sesame seeds and some uncooked scallion greens.
- 11 good hot or chilled.
