Sesame Noodles With Ginger And Scallions

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • Servings: 3
  • 1/2 lb angel hair pasta
  • 1 tablespoon olive oil
  • 3 1/2 tablespoons minced fresh ginger
  • 1/2 cup minced scallion, part only
  • 1 1/2 cups scallion tops, cut into 1/4-in . pieces
  • 2 tablespoons rice
  • 2 cups bean sprouts
  • 1 1/2 tablespoons sesame seeds, toasted until golden in dry pan
  • 3 1/2 tablespoons soy sauce (or bragg)
  • 1 1/2 tablespoons toasted sesame oil
  • 3/4 tablespoon sugar
  • 1 dash black pepper
  • 1 1/2 tablespoons rice vinegar

Recipe

  • 1 mix dressing and set aside.
  • 2 cook noodles until tender (about 8 minutes), rinse, and drain.
  • 3 heat wok or heavy skillet over high heat.
  • 4 add oil and heat about 15 seconds.
  • 5 add ginger and scallion whites, stir about 20 seconds.
  • 6 add greens, rice , and bean sprouts.
  • 7 toss lightly about 1 minute.
  • 8 add cooked noodles and dressing and continue tossing until noodles are fully heated.
  • 9 add sesame seeds.
  • 10 dress with a few more sesame seeds and some uncooked scallion greens.
  • 11 good hot or chilled.
