Sesame Raised Cornmeal Muffins

Ingredients
- 1 (1/4 ounce) package dry yeast
- 1/4 cup warm water
- 1 cup cornmeal
- 1/2 cup sugar
- 1 tablespoon salt
- 1/2 cup butter
- 2 cups scalded milk
- 4 cups sifted flour
- 2 eggs, beaten
- 1/4 cup sesame seeds
Recipe
- 1 dissolve the yeast in the warm water.
- 2 place the cornmeal, sugar, salt and butter in a large bowl.
- 3 add heated milk and stir occasionally, until the butter melts.
- 4 cool to lukewarm.
- 5 beat in 1 cup flour and eggs, then add the yeast.
- 6 beat in the remaining flour.
- 7 mixture will very stiff.
- 8 cover and let rise in warm place until doubled (approximately 1 hour).
- 9 stir down and fill 24 oiled medium muffin cups 3/4 full.
- 10 cover and let rise in a warm place for about 45 minutes, or until nearly doubled in bulk.
- 11 sprinkle with sesame seed.
- 12 bake at 400 degrees f for 15 minutes, or until golden brown.
