Mrs Johnson's Peach Preserves

Ingredients
- 4 cups sugar
- 1 cup water
- 1 teaspoon salt
- 1 tablespoon vanilla
- 1 tablespoon lemon extract
- 6 lbs peaches, ripe
Recipe
- 1 peel and slice peaches. about 24 of them.
- 2 bring sugar and water to a boil.
- 3 cook for 5 minutes or till a syrup forms.
- 4 skim off any foam.
- 5 stir in peaches.
- 6 return to a boil.
- 7 watch for boiling over.
- 8 boil for 5 minutes stirring constantly.
- 9 remove from heat.
- 10 skim off any foam.
- 11 add extracts. add salt.
- 12 fill clean sterilized jars.
