Mrs Johnson's Peach Preserves

Total Time: 2 hrs Preparation Time: 1 hr Cook Time: 1 hr

Ingredients

  • 4 cups sugar
  • 1 cup water
  • 1 teaspoon salt
  • 1 tablespoon vanilla
  • 1 tablespoon lemon extract
  • 6 lbs peaches, ripe

Recipe

  • 1 peel and slice peaches. about 24 of them.
  • 2 bring sugar and water to a boil.
  • 3 cook for 5 minutes or till a syrup forms.
  • 4 skim off any foam.
  • 5 stir in peaches.
  • 6 return to a boil.
  • 7 watch for boiling over.
  • 8 boil for 5 minutes stirring constantly.
  • 9 remove from heat.
  • 10 skim off any foam.
  • 11 add extracts. add salt.
  • 12 fill clean sterilized jars.
