Sesame Noodles

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1 (16 ounce) package linguine
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup seasoned rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon crushed red pepper flakes
  • 1 large red bell pepper
  • 3 (4 ounce) unpeeled kirby cucumbers or 1 large regular cucumber, peeled and seeded
  • 1/4 cup packed fresh cilantro leaves
  • 1 1/2 cups shredded carrots (about half of a 10 ounce package)

Recipe

  • 1 heat a large, covered saucepot of salted water to boiling over high heat.
  • 2 add pasta and cook as package directs.
  • 3 meanwhile, in large bowl, whish together peanut butter, soy sauce, vinegar, oil, lime juice and crushed red pepper until smooth.
  • 4 cut red bell pepper and cucumber into matchstick-thin strips.
  • 5 chop cilantro.
  • 6 drain pasta.
  • 7 rinse with cold water; drain again.
  • 8 add pasta, cucumber, red bell pepper and carrots to sauce in bowl; toss to coat.
  • 9 sprinkle with cilantro and serve.
