Lemon Poppy Muffins

Ingredients

- 1/3 cup milk
- 1/4 cup oil
- 1 (6 ounce) container lemon low fat yogurt
- 1 egg
- 1 3/4 cups flour
- 1/4 cup sugar
- 2 tablespoons poppy seeds
- 1 tablespoon grated lemon, rind of
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup confectioners' sugar
- 3 teaspoons lemon juice
Recipe
- 1 heat oven to 400°.
- 2 grease bottoms only of 12 regular size muffin cups, or place paper baking cups in muffin cups.
- 3 beat milk, oil, yogurt and egg in large bowl.
- 4 stir in remaining ingredients.
- 5 bake 12-15 minutes.
- 6 top with lemon glaze while warm.
