Lemon Poppy Muffins

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 12
  • 1/3 cup milk
  • 1/4 cup oil
  • 1 (6 ounce) container lemon low fat yogurt
  • 1 egg
  • 1 3/4 cups flour
  • 1/4 cup sugar
  • 2 tablespoons poppy seeds
  • 1 tablespoon grated lemon, rind of
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup confectioners' sugar
  • 3 teaspoons lemon juice

Recipe

  • 1 heat oven to 400°.
  • 2 grease bottoms only of 12 regular size muffin cups, or place paper baking cups in muffin cups.
  • 3 beat milk, oil, yogurt and egg in large bowl.
  • 4 stir in remaining ingredients.
  • 5 bake 12-15 minutes.
  • 6 top with lemon glaze while warm.
