Sesame Lamb Fajitas

Ingredients
- Servings: 4
- 1 lb lamb tenderloin
- 2 teaspoons dark sesame oil
- 1 teaspoon gingerroot, peeled & grated
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 2 garlic cloves, minced
- 4 moo shu pancakes or 4 flour tortillas
- vegetable oil cooking spray
- 1/4 cup hoisin sauce
Recipe
- 1 trim fat off lamb and cut into thin strips.
- 2 combine lamb with marinade ingredients in a zip-top plastic bag, and shake well to coat.
- 3 marinate in refrigerator for 20 minutes.
- 4 heat moo shu shells according to directions on package.
- 5 coat a skillet with cooking spray, and warm over medium-high heat until hot.
- 6 stir-fry lamb for 4 minutes.
- 7 divide lamb evenly between moo shu shells, drizzle with hoisin sauce, and roll up.
