Sesame Lamb Fajitas

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb lamb tenderloin
  • 2 teaspoons dark sesame oil
  • 1 teaspoon gingerroot, peeled & grated
  • 1/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 2 garlic cloves, minced
  • 4 moo shu pancakes or 4 flour tortillas
  • vegetable oil cooking spray
  • 1/4 cup hoisin sauce

Recipe

  • 1 trim fat off lamb and cut into thin strips.
  • 2 combine lamb with marinade ingredients in a zip-top plastic bag, and shake well to coat.
  • 3 marinate in refrigerator for 20 minutes.
  • 4 heat moo shu shells according to directions on package.
  • 5 coat a skillet with cooking spray, and warm over medium-high heat until hot.
  • 6 stir-fry lamb for 4 minutes.
  • 7 divide lamb evenly between moo shu shells, drizzle with hoisin sauce, and roll up.
