Sage Lamb Chops

Ingredients
- 4 lamb chops, bone-in
- 4 tablespoons fresh sage, leaves stripped & chopped
- 2 tablespoons olive oil, divided
- 2 tablespoons butter
- 1/2 cup dry white
- salt & pepper
Recipe
- 1 heat skillet to medium high.
- 2 season chops: drizzle with some olive oil, season with salt and pepper on both sides, rub on sage (both sides).
- 3 add 1 tablespoon of olive oil to heated skillet, add butter and melt.
- 4 add lamb chops, cook 5 minutes on each side or until cooked through.
- 5 transfer chops to warm platter.
- 6 add to pan and scrape drippings.
- 7 pour drippings over chops and serve.
