Pink Lemonade Meringue Pie

Ingredients
- 1 envelope knox unflavored gelatin
- 1 (6 ounce) can frozen pink lemonade concentrate, thawed
- 1 cup evaporated milk
- 1 pie shell
- 1/4 cup cold water
- 3/4 cup sugar
- 3 drops red food coloring
Recipe
- 1 bake pie shell first, then cool.
- 2 in a small saucepan, soften gelatin in cold water.
- 3 add lemonade concentrate to the gelatin and then stir in sugar until dissolved.
- 4 chill completely.
- 5 chill evaporated milk in a small bowl in th freezer until crystals form on the edges.
- 6 beat milk in the chilled bowl on high speed until stiff.
- 7 fold into chilled gelatin mix and add food coloring with a whisk.
- 8 pour into pie shell.
- 9 chill for a minimum of 3-4 hurs until it sets.
