Poached Apricots

Ingredients
- Servings: 6
- 1 kg sulphur free dried apricot
- 1 cup sugar
- 2 vanilla beans, split
- 1 pinch salt
Recipe
- 1 soak apricots in cold water for 1/2 hour or more.
- 2 transfer with soaking water to large pan.
- 3 add sugar, scrape seeds from vanilla beans.
- 4 add seeds and pod to the pan.
- 5 bring slowly to a simmer.
- 6 cook gently till very tender - about 40 minutes.
- 7 cool then strain.
- 8 place strained off juice into pot and reduce over heat by 1/3 or.
- 9 till syrupy.
- 10 cool then serve apricots and juice with cream.
