Poached Apricots

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 kg sulphur free dried apricot
  • 1 cup sugar
  • 2 vanilla beans, split
  • 1 pinch salt

Recipe

  • 1 soak apricots in cold water for 1/2 hour or more.
  • 2 transfer with soaking water to large pan.
  • 3 add sugar, scrape seeds from vanilla beans.
  • 4 add seeds and pod to the pan.
  • 5 bring slowly to a simmer.
  • 6 cook gently till very tender - about 40 minutes.
  • 7 cool then strain.
  • 8 place strained off juice into pot and reduce over heat by 1/3 or.
  • 9 till syrupy.
  • 10 cool then serve apricots and juice with cream.
