Lemon Cranberry Muffins

Total Time: 26 mins Preparation Time: 10 mins Cook Time: 16 mins

Ingredients

  • Servings: 12
  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 cup unbleached cane sugar
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup greek yogurt
  • 1 egg, beaten
  • 1 tablespoon oil
  • 1 teaspoon vanilla
  • 1 lemon, juice and zest
  • 1/2 cup orange juice
  • 1/4 cup milk
  • 1 1/2 cups fresh cranberries, cut in half

Recipe

  • 1 preheat oven to 400.
  • 2 mix together dry ingredients.
  • 3 in another bowl, mix together wet ingredients.
  • 4 add wet to dry, mix until just combined.
  • 5 fold in cranberries.
  • 6 grease 12 muffin tins.
  • 7 spoon in batter and bake for 16-18 minutes.
