Sesame Cucumber Salad

Ingredients

  • Servings: 8
  • 8 cups cucumbers (thinly sliced)
  • 1 tablespoon salt
  • 2 green onions (sliced)
  • 1 clove garlic (minced)
  • 2 1/2 tablespoons soy sauce
  • 2 tablespoons vinegar
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame seeds (toasted)
  • 1/8 teaspoon cayenne pepper

Recipe

  • 1 place cucumbers in a colander, sprinkle with salt& toss.
  • 2 let stand for 30 minutes.
  • 3 rinse cucumbers& drain well.
  • 4 in a large bowl, combine the onions, garlic, soy sauce, vinegar, oil, sesame seeds& cayenne.
  • 5 add cucumbers& toss to coat.
  • 6 cover& refrigerate until ready to serve.
