Sesame Cucumber Salad

Ingredients

- 8 cups cucumbers (thinly sliced)
- 1 tablespoon salt
- 2 green onions (sliced)
- 1 clove garlic (minced)
- 2 1/2 tablespoons soy sauce
- 2 tablespoons vinegar
- 1 tablespoon vegetable oil
- 1 tablespoon sesame seeds (toasted)
- 1/8 teaspoon cayenne pepper
Recipe
- 1 place cucumbers in a colander, sprinkle with salt& toss.
- 2 let stand for 30 minutes.
- 3 rinse cucumbers& drain well.
- 4 in a large bowl, combine the onions, garlic, soy sauce, vinegar, oil, sesame seeds& cayenne.
- 5 add cucumbers& toss to coat.
- 6 cover& refrigerate until ready to serve.
