Sesame Cabbage Salad

Ingredients

  • Servings: 6
  • 1 english cucumber
  • 1 cup thinly slivered red onion
  • 4 cups finely shredded napa cabbage
  • 4 cups shredded red cabbage
  • 1/3 cup finely sliced green onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons roasted sesame seeds
  • 1/2 cup rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon asain toasted sesame oil
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 rince and thinly slice cucumber, in a bowl, mix cucumber, onion and sesame dressing.
  • 2 cover and chill at least 1 hour or up to 1 day.
  • 3 up to 1 hour before serving, layer napa cabbage and red cabbage in a bowl.
  • 4 pour marinated cucumber mixture over the top.
  • 5 sprinkle with green onions, cilantro and sesame seeds.
  • 6 just brfore serving mix well.
  • 7 sesame dressing: in a small bowl or 1 cup measuring cup mix together all of the ingredients for dressing, makes 3/4 cup.
