Sesame Cabbage Salad

Ingredients

- 1 english cucumber
- 1 cup thinly slivered red onion
- 4 cups finely shredded napa cabbage
- 4 cups shredded red cabbage
- 1/3 cup finely sliced green onion
- 1/4 cup chopped fresh cilantro
- 2 tablespoons roasted sesame seeds
- 1/2 cup rice vinegar
- 2 tablespoons sugar
- 1 tablespoon asain toasted sesame oil
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 rince and thinly slice cucumber, in a bowl, mix cucumber, onion and sesame dressing.
- 2 cover and chill at least 1 hour or up to 1 day.
- 3 up to 1 hour before serving, layer napa cabbage and red cabbage in a bowl.
- 4 pour marinated cucumber mixture over the top.
- 5 sprinkle with green onions, cilantro and sesame seeds.
- 6 just brfore serving mix well.
- 7 sesame dressing: in a small bowl or 1 cup measuring cup mix together all of the ingredients for dressing, makes 3/4 cup.
