Sesame Rice

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1 cup brown rice
  • 1 1/2 teaspoons dark toasted sesame oil
  • 1 1/2 cups water
  • 1/3 cup minced scallion
  • 2 tablespoons toasted sesame seeds
  • 2 -3 teaspoons soy sauce, to taste

Recipe

  • 1 in a saucepan with a tight-fitting lid, toss the rice with 1/2 teaspoons of the sesame oil to coat the grains.
  • 2 add the water, cover, and bring to a boil, then reduce the heat and simmer until the rice is tender, about 40 to 45 minutes.
  • 3 stir in the scallions, sesame seeds, the remaining sesame oil, and soy sauce to taste.
  • 4 enjoy!
  • 5 note:.
  • 6 toast sesame seeds in a single layer on an unoiled baking tray at 350*f for 2 to 3 minutes, until fragrant and golden.
  • 7 watch carefully, so as not to burn!

Sesame Snackers

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 36
  • 3/4 cup cooking oil
  • 1 1/2 cups brown sugar, packed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sesame seeds, toasted in 350 degree oven for 15 minutes to brown,stirring twice
  • 1/8 cup toasted sesame seeds, for topping

Recipe

  • 1 combine oil, sugar, egg and vanilla in mixing bowl.
  • 2 beat well.
  • 3 add flour, baking powder, salt and first amount of sesame seeds.
  • 4 stir well.
  • 5 shape into small balls.
  • 6 place a ungreased cookie sheet.
  • 7 flatten with a glass.
  • 8 sprinkle with sesame seeds.
  • 9 bake in 350 degree oven for 8-10 minutes.
  • 10 makes 4 dozen.

Sesame Seed / Nut Milk

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • Servings: 2
  • 1 cup natural sesame seeds
  • 2 cups pure water

Recipe

  • 1 soak 1 cup of seeds in 2 cups of water overnight.
  • 2 in morning, blend in blender for 5 minutes or until smooth.
  • 3 strain and pour into a jar.
  • 4 note: i strain the seeds then add fresh water before blending although it's not necessary.

Sesame Salt

Total Time: 5 mins Preparation Time: 2 mins Cook Time: 3 mins

Ingredients

  • 3 tablespoons black sesame seeds or 3 tablespoons sub sesame seeds or 3 tablespoons tan sesame seeds, as available
  • 1 teaspoon sea salt

Recipe

  • 1 put sesame seeds and salt on a small, heavy, dry skillet over medium-high heat.
  • 2 cook, stirring constistently for 3 minutes, or until both salt and seeds are lightly browned and fragrant, and a seed or 2 start to"pop".
  • 3 the sea salt may look more gray than browned.
  • 4 remove from heat and grind to a fairly fine powder in a blender, food processor, or spice grinder; morter and pestle also work, though be sure to grind to a powder like consistency.
  • 5 store in an airtight jar.

Sesame Shrimp Toasts

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 6 ounces cooked peeled and dried with a kitchen towel shrimp, (fresh is what i use)
  • 3/4 inch fresh gingerroot, grated
  • 1 clove garlic, chopped
  • 1 small sized egg , beaten well
  • 2 teaspoons cornstarch
  • 1/4 teaspoon chinese five spice powder
  • 1/4 teaspoon salt
  • 4 slices thin, medium sandwich bread, crusts removed ((the slices are 8 cm x 8 cm so if you use bigger slices you will need to increase the qty of ingred)
  • 2 tablespoons sesame seeds
  • vegetable oil

Recipe

  • 1 place the shrimp, ginger and garlic in a mini chopper and whizz until finely ground. add the cornstarch, chinese five-spice powder and salt until well blended.
  • 2 whisk the egg until frothy. add this to the above mix a little at a time till you get a paste that can be applied.
  • 3 add more cornflour if required.
  • 4 spread the mixture evenly on to the bread, then sprinkle the sesame seeds on top, pressing them in firmly with the fingertips.
  • 5 cut each slice into 4 squares, fingers or triangles.
  • 6 heat about 4 tbsp of oil in a frying pan; when hot, reduce the heat before adding the toasts.
  • 7 cook shrimp side down for 4 minutes until golden, then turn and cook the other side- you might need a little more oil.
  • 8 drain on paper towels and serve warm.

Sesame Spice Mix

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • 3/4 cup sesame seeds
  • 1/4 cup black sesame seed
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon nigella seeds

Recipe

  • 1 put all ingredients in a spice grinder or food processor and finely grind. do not overgrind or you will get tahini!
  • 2 store in airtight container in the refrigerator.

Sesame Spread

Total Time: 7 mins Preparation Time: 5 mins Cook Time: 2 mins

Ingredients

  • Servings: 4
  • 2 cloves garlic
  • 1 cup parsley
  • 1 1/3 cups roasted sesame seeds (roast on a hot pan until golden)
  • 1 lemon, juice of
  • 7 ounces vegetable broth
  • 2 tablespoons olive oil

Recipe

  • 1 grind sesame in a blender or food processor on high for 15 seconds or until very fine.
  • 2 add all the other ingredients and blend until smooth.
