Sadie Mae's Fried Zucchini & Yellow Squash

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 large zucchini
  • 2 small crookneck yellow squash
  • 2 medium onions
  • 2 eggs, slightly beaten
  • 1 cup flour
  • 1/4-1/2 cup olive oil
  • salt and pepper

Recipe

  • 1 slice the first three ingredients into 1/4" round slices.
  • 2 in a small bowl beat eggs with a little salt and pepper.
  • 3 place flour on a dinner size plate.
  • 4 dredge the squash and onions in the eggs and then lightly flour.
  • 5 in a large skillet heat about 1/4-inch olive oil.
  • 6 lay in a single layer the pieces of squash and onion.
  • 7 fry until tender and golden brown.
  • 8 repeat until all the squash and onions are fired.
  • 9 sprinkle with a little more salt and pepper.
