Safari Cocktail - Mount Kenya Safari Club

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 8 slices fresh pineapple
  • 1/2 cup fresh mint, chopped
  • 4 ounces
  • green food coloring (optional)
  • 8 green cherries, for garnish
  • 8 pineapple chunks, for garnish
  • 8 mint leaves, for garnish

Recipe

  • 1 place the pineapple slices in a bowl and sprinkle with the chopped mint.
  • 2 pour the over top and refrigerate for 1 hour.
  • 3 half an hour before serving, run cocktail glasses under cold water and place in the freezer,
  • 4 just before serving, purã©e the -pineapple-mint mixture in a blender with a little green food coloring. pour into frosted glasses.
