Saffron Rice

Ingredients

- 8 tablespoons butter
- 1 cup finely chopped onion
- 4 cups water
- 4 teaspoons chicken base
- fresh ground black pepper
- 8 saffron threads (optional)
- 2 cups short-grain rice, rinsed
- 1 cup chopped thin green beans
- 1 cup frozen peas
Recipe
- 1 preheat oven to 375°f.
- 2 melt butter in a saucepan.
- 3 add onion and cook until softened.
- 4 add water and chicken base (4 cups chicken stock may be substituted).
- 5 add pepper or saffron.
- 6 stir.
- 7 bring to a boil.
- 8 add rice. stir.
- 9 add beans and peas.
- 10 stir.
- 11 cover.
- 12 bake for 20 minutes.
