Saffron Rice

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 8 tablespoons butter
  • 1 cup finely chopped onion
  • 4 cups water
  • 4 teaspoons chicken base
  • fresh ground black pepper
  • 8 saffron threads (optional)
  • 2 cups short-grain rice, rinsed
  • 1 cup chopped thin green beans
  • 1 cup frozen peas

Recipe

  • 1 preheat oven to 375°f.
  • 2 melt butter in a saucepan.
  • 3 add onion and cook until softened.
  • 4 add water and chicken base (4 cups chicken stock may be substituted).
  • 5 add pepper or saffron.
  • 6 stir.
  • 7 bring to a boil.
  • 8 add rice. stir.
  • 9 add beans and peas.
  • 10 stir.
  • 11 cover.
  • 12 bake for 20 minutes.
