Low-fat Orange Oaties

Total Time: 27 mins Preparation Time: 15 mins Cook Time: 12 mins

Ingredients

  • 3/4 cup clear honey
  • 1/2 cup orange juice
  • 1 cup rolled oats, lightly toasted
  • 1 cup all-purpose flour
  • 1/2 cup superfine sugar
  • 1 orange rind, finely grated
  • 1 teaspoon baking soda

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 line two baking sheets with parchment paper.
  • 3 put the honey and orange juice in a small pan and simmer over a low heat for 8 - 10 minutes, stirring occasionally, until the mixture is thick and syrupy.
  • 4 put the oats, flour, sugar and orange rind into a bowl. mix the baking soda with 1 tbsp boiling water and add to the flour mixture, together with the honey and orange syrup. mix well with a wooden spoon.
  • 5 place spoonfuls of the mixture on to the prepared baking sheets, spaced slightly apart and bake for 10 - 12 minutes or until golden brown. leave to cool on the sheets for 5 minutes before transferring to a wire rack to cool completely.
