Lavender Custard

Ingredients
- Servings: 4
- 1/2 cup heavy whipping cream
- 1/2 cup milk
- 2 tablespoons honey
- 3 tablespoons sugar
- 1 pinch salt
- 7 lavender, spikes
- 2 large egg yolks
- 1/2 cup whipped cream, whipped
Recipe
- 1 combine cream, milk, honey, sugar, salt and lavender in double boiler.
- 2 cook for 10 minutes over hot simmering water, stir frequently.
- 3 in a small bowl, beat the egg yolks.
- 4 add 1/2 cup of custard to the yolks, mixing well.
- 5 return to double boiler and stir until thickens.
- 6 remove from heat.
- 7 strain custard to remove lavender and put in a bowl.
- 8 put waxed paper across custard to prevent skin from forming.
- 9 chill until set.
- 10 before serving, whip cream and fold in custard.
