Sesame Soy Vinaigrette

Ingredients

  • Servings: 4
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 tablespoon light soy sauce
  • 1 tablespoon rice vinegar
  • 1 pinch sugar
  • salt and pepper

Recipe

  • 1 whisk all ingredients in a small bowl. season with salt and pepper to taste.

Creamy Mexican Dip

Ingredients

  • 1 (16 ounce) container sour cream
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup salsa
  • 1 avocados - peeled, pitted and diced

  • in a medium size bowl, combine sour cream, cheddar cheese, salsa, and avocado. combine ingredients until they are just mixed. cover and chill until you are ready serve.

  • 1 (10.5 ounce) package large marshmallows

  • build a nice fire and let the wood burn down into coals. this takes about an hour.
  • thread a marshmallow a stick, then thread a caramel candy the stick in front of the marshmallow. roast over the coals from the fire until the marshmallow is the desired doneness, but not on fire. pull the marshmallow up over the caramel so that it is inside. let cool and enjoy!

marinated portobello mushrooms

Ingredients

  • 2 portobello mushrooms, cut into 1/2 inch pieces
  • 10 tablespoons balsamic vinegar
  • 4 tablespoons dried rosemary
  • salt and pepper to taste
  • 1 tablespoon olive oil

  • in a nonporous glass dish or bowl, combine the mushrooms, vinegar, rosemary, and salt and pepper. stir to coat. cover, and refrigerate for at least 30 minutes.
  • preheat grill for high heat.
  • brush grate with oil, and arrange marinated mushrooms on hot grill. turn after 2 to 3 minutes, and continue grilling until mushrooms are heated through and look wilted and black. serve hot off the grill.

Sauerkraut Balls

Ingredients

  • Servings: 15
  • 1 teaspoon baking powder
  • 1 cup sifted all-purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground mace
  • 2 eggs
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • 2 cups sauerkraut, drained
  • 4 tablespoons vegetable oil

  • sift together baking powder, flour, salt, and mace.
  • in a medium-size mixing bowl, combine eggs, milk, and melted butter or margarine. stir the flour mixture into the egg mixture until smooth. fold sauerkraut into the dough.
  • heat 4 tablespoons of vegetable oil in a large skillet. drop the sauerkraut dough by teaspoonful into the hot oil; fry until the balls are browned on all sides, approximately 2 or 3 minutes.

crumbed avocado steak

Ingredients

  • Servings: 4
  • 4 scotch fillets (chuck eye)
  • 1/2 cup all-purpose flour
  • salt and ground black pepper to taste
  • 2 eggs
  • 3 cups fresh bread crumbs
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup butter
  • 2 tablespoons vegetable oil
  • 1 avocado - peeled, pitted and sliced
  • mustard sauce
  • 3 egg yolks
  • 1 tablespoon lemon juice
  • salt and pepper to taste
  • 2 teaspoons dijon mustard
  • 1/2 cup butter, diced and softened

    Preparation Time: 20 mins Cook Time: 10 mins Ready Time: 30 mins

  • pound the steaks out to 1/2 inch thickness.
  • coat steaks lightly with flour seasoned with salt and pepper. dip steaks into lightly-beaten eggs, then coat with combined breadcrumbs and parsley, pressing on firmly. place steaks on to tray, and refrigerate until ready to cook.
  • in a large frying pan, heat 1/4 cup butter and oil over medium-high heat. cook steaks until golden brown, and cooked to desired doneness. remove from pan, and keep warm.
  • in a metal bowl, whisk together egg yolks, lemon juice, salt, pepper, and mustard. place the bowl over simmering water, and stir until sauce is thick and creamy. whisk in the remaining 1/2 cup softened butter, and remove from heat.
  • place steaks serving plates, place two slices of avocado on each steak, and spoon the mustard sauce over each one.

Baked Artichoke Dip

Ingredients

  • Servings: 12
  • 2 cups mayonnaise
  • 2 cloves crushed garlic
  • 2 cups grated parmesan cheese
  • 2 (6.5 ounce) jars marinated artichoke hearts, chopped
  • 1 dash worcestershire sauce
  • ground cayenne pepper to taste
  • 1 teaspoon dried parsley

  • preheat oven to 350 degrees f (175 degrees c).
  • in a large bowl, combine the mayonnaise, crushed garlic, parmesan cheese, artichoke hearts and worcestershire sauce. pour into a baking dish and top with cayenne pepper and parsley flakes.
  • bake in the preheated oven, approximately 30 to 45 minutes, until hot and bubbly. serve with tortilla chips, crackers or veggies.
