Roasted Red Potato Salad

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 2 lbs red potatoes, diced
  • 1/2 onion, diced
  • 2 teaspoons garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground pepper
  • 10 slices cooked bacon, crumbled
  • 1 bunch green onion, chopped
  • 3/4 cup ranch salad dressing

Recipe

  • 1 toss first six ingredients together and place in single layer on cookie sheet sprayed with pam.
  • 2 bake at 425 degrees for 40 minutes, stirring occasionally.
  • 3 transfer to large bowl.
  • 4 toss remaining ingredients. can be eaten warm or cold. we prefer it room temp to warm.
