Roasted Red Potato Salad

Ingredients
- Servings: 4
- 2 tablespoons olive oil
- 2 lbs red potatoes, diced
- 1/2 onion, diced
- 2 teaspoons garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon ground pepper
- 10 slices cooked bacon, crumbled
- 1 bunch green onion, chopped
- 3/4 cup ranch salad dressing
Recipe
- 1 toss first six ingredients together and place in single layer on cookie sheet sprayed with pam.
- 2 bake at 425 degrees for 40 minutes, stirring occasionally.
- 3 transfer to large bowl.
- 4 toss remaining ingredients. can be eaten warm or cold. we prefer it room temp to warm.
