Roasted Sweet Potatoes With Chestnuts

- 4 lbs sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- salt & freshly ground black pepper
- 1 lb bacon (thick-cut)
- 1 cup french chestnuts, with
- , halved
- 1/2 cup green onion, chopped
Recipe
- 1 preheat oven to 375°f.
- 2 in a large mixing bowl, toss sweet potatoes with olive oil, salt and pepper.
- 3 spread potatoes out on a baking sheet in a single layer.
- 4 roast, stirring occasionally and rotating the pan after about 25 minutes, until the potatoes are tender and golden around the edges, 45-50 minutes.
- 5 meanwhile, in a large frying pan over medium heat, fry bacon until crisp then drain all but 2 tbs of the fat out of the pan.
- 6 transfer the bacon to a plate and blot with paper towels.
- 7 in the remaining bacon grease add chestnuts and saute, stirring, until heated through, 2-3 minutes.
- 8 return bacon to the pan along with the roasted sweet potatoes and green onions. stir to mix, adjust seasonings and serve immediately.
