Roasted Sweet Potato Salad

Ingredients

  • Servings: 8
  • 6 medium-large sweet potatoes, peeled and diced
  • 2 -3 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 2 tablespoons honey
  • 2 tablespoons brown mustard or 2 tablespoons spicy mustard
  • 3 -4 tablespoons mayonnaise
  • 1/2 teaspoon dried basil

Recipe

  • 1 placed the peeled and diced sweet potatoes in a colander and rinse them with water.
  • 2 dump them in a large bowl and toss with the olive oil, cinnamon, nutmeg, and allspice. place them in a single layer on a rimmed baking sheet.
  • 3 roast at 400 degrees for 25-35 minutes, or until all are soft. roasting time may vary depending on thickness of the sweet potato pieces. remove from oven and let cool.
  • 4 in a small mixing bowl, whisk together the honey, mustard, and mayonnaise. stir in the basil leaves. pour the dressing over the top of the sweet potatoes.
  • 5 serve warm, or chill for at least two hours and serve chilled.
