Roasted Sweet Potato Wedges

Total Time: 43 mins Preparation Time: 8 mins Cook Time: 35 mins

Ingredients

  • 2 large sweet potatoes, washed and patted dry
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried rosemary, crushed

Recipe

  • 1 preheat oven to 425 degrees.
  • 2 cut each potato into 8 lengthwise wedges and place on a nonstick baking sheet.
  • 3 drizzle with oil; sprinkle with salt and dried rosemary.
  • 4 roast for 15 minutes; toss and roast until potatoes are tender, about 15 to 20 minutes more.
  • 5 if you like your potatoes well-done, place them under the broiler for a minute of two.
