Roasted Red Potatoes

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 lb small red potato
  • 1 tablespoon olive oil or 1 tablespoon vegetable oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons grated parmesan cheese

Recipe

  • 1 preheat oven to 350°f.
  • 2 grease 13x 9x2-inch baking pan or casserole dish.
  • 3 cut potatoes, unpeeled and uncooked, into 1/4-inch slices, then toss in plastic bag with oil.
  • 4 single layer them in baking pan.
  • 5 sprinkle with remaining three ingredients.
  • 6 cover tightly with foil and bake for 40 minutes or until slices are cooked.
