Roasted Red Potatoes

Ingredients

- 1 lb small red potato
- 1 tablespoon olive oil or 1 tablespoon vegetable oil
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons grated parmesan cheese
Recipe
- 1 preheat oven to 350°f.
- 2 grease 13x 9x2-inch baking pan or casserole dish.
- 3 cut potatoes, unpeeled and uncooked, into 1/4-inch slices, then toss in plastic bag with oil.
- 4 single layer them in baking pan.
- 5 sprinkle with remaining three ingredients.
- 6 cover tightly with foil and bake for 40 minutes or until slices are cooked.
