Orange Coconut Cream Pudding

• 1 (3 1/2 ounce) package coconut cream pudding mix or 1 (3 1/2 ounce) package vegetarian coconut cream pudding mix
• 1 1/2 cups milk
• 1/2 cup orange juice
• 1/2 teaspoon orange rind, grated

Recipe

• 1 combine mix and milk in a 11/2-qt. microwave-safe bowl, blend well.
• 2 cook at high 3 minutes. stir well and cook 2 minutes longer; then stir again and cook 1 minute more or until mixture comes to a boil.
• 3 stir in orange juice and rind.
• 4 spoon into individual dessert dishes.
• 5 chill.
