Mom's Baked Beans

Ingredients

  • Servings: 10
  • 1 lb dried navy beans
  • 1 1/2 cups onions, chopped
  • 2 teaspoons vinegar
  • 1/2 teaspoon dried mustard
  • 1 tablespoon brown sugar
  • 1/4 cup molasses
  • 1/2 cup ketchup
  • 1 cup water
  • 1/2 teaspoon pepper
  • 1/4 lb bacon

Recipe

  • 1 rinse beans. soak overnight in 4 cups of water.
  • 2 drain, measuring water. discard the soaking water and add fresh water in an equal amount. (this makes the beans less 'gassy').
  • 3 add remaining ingredients except bacon.
  • 4 bring to a boil and cook for 1 1/2 hours. remove from heat.
  • 5 cut bacon into 1/4" pieces. stir into the beans and put the mixture in a 10 cup casserole or a bean pot.
  • 6 bake, covered, at 250f for 7 hours.
  • 7 after 4 hours, remove one cup of beans, mash and stir back in to thicken juice.
  • 8 check occasionally during cooking and add a little more hot water if it starts to get too thick.
