Mom's Baked Beans

Ingredients

- 1 lb dried navy beans
- 1 1/2 cups onions, chopped
- 2 teaspoons vinegar
- 1/2 teaspoon dried mustard
- 1 tablespoon brown sugar
- 1/4 cup molasses
- 1/2 cup ketchup
- 1 cup water
- 1/2 teaspoon pepper
- 1/4 lb bacon
Recipe
- 1 rinse beans. soak overnight in 4 cups of water.
- 2 drain, measuring water. discard the soaking water and add fresh water in an equal amount. (this makes the beans less 'gassy').
- 3 add remaining ingredients except bacon.
- 4 bring to a boil and cook for 1 1/2 hours. remove from heat.
- 5 cut bacon into 1/4" pieces. stir into the beans and put the mixture in a 10 cup casserole or a bean pot.
- 6 bake, covered, at 250f for 7 hours.
- 7 after 4 hours, remove one cup of beans, mash and stir back in to thicken juice.
- 8 check occasionally during cooking and add a little more hot water if it starts to get too thick.
