Roasted Tomato & Red Pepper Pasta

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 6 large tomatoes, quartered
  • 2 large red peppers, deseeded and roughly chopped
  • 2 garlic cloves, crushed
  • 2 tablespoons low-fat creme fraiche
  • 350 g dry pasta (any shape)

Recipe

  • 1 put the tomatoes, peppers and garlic in a roasting tin and roast in a medium oven for about 40mins, or until soft and juicy.
  • 2 meanwhile, cook the pasta as per packet directions.
  • 3 add the cooked pasta and creme fraiche to the roasting tin mixture and stir well.
  • 4 put back in the oven for 5 minutes to heat through.
  • 5 serve and enjoy!
