Roasted Tomato & Red Pepper Pasta

Ingredients
- Servings: 4
- 6 large tomatoes, quartered
- 2 large red peppers, deseeded and roughly chopped
- 2 garlic cloves, crushed
- 2 tablespoons low-fat creme fraiche
- 350 g dry pasta (any shape)
Recipe
- 1 put the tomatoes, peppers and garlic in a roasting tin and roast in a medium oven for about 40mins, or until soft and juicy.
- 2 meanwhile, cook the pasta as per packet directions.
- 3 add the cooked pasta and creme fraiche to the roasting tin mixture and stir well.
- 4 put back in the oven for 5 minutes to heat through.
- 5 serve and enjoy!
