Roasted Red Pepper Soup

Ingredients

  • Servings: 4
  • 24 ounces roasted red peppers
  • 1 cup chicken broth
  • 1 cup fat free sour cream
  • 2 cups fat-free half-and-half
  • 1 tablespoon curry powder
  • 1/2 teaspoon cayenne
  • 1 pinch salt
  • 1 teaspoon sugar
  • 2 cups frozen corn kernels

Recipe

  • 1 drain red peppers.
  • 2 combine red peppers and next 6 ingredients in a blender.
  • 3 blend together until creamy and frothy.
  • 4 pour soup into saucepan and add frozen corn kernels.
  • 5 heat.
