Roasted Tomato Salad With Herbs And Feta

Ingredients
- Servings: 4
- 6 medium low acid tomatoes, halved lengthwise
- olive oil flavored cooking spray
- 1 1/2 teaspoons sea salt
- 2 tablespoons red vinegar
- 2 teaspoons olive oil
- 2 teaspoons whole grain mustard (i use honey grain)
- 1/2 cup fresh flat-leaf parsley, coarsely chopped
- 1/2 cup fresh basil leaf, coarsely chopped
- 50 g feta, crumbled
- fresh ground black pepper
Recipe
- 1 pre heat oven to 180c.
- 2 spray a medium baking dish with the olive oil spray to coat.
- 3 place the halved tomatoes, cut side up, in a single layer in the prepared dish.
- 4 sprinkle with the sea salt and lightly spray with more olive oil spray.
- 5 bake for 40 minutes or until tomatoes are lightly browned and tender.
- 6 meanwhile, combine the vinegar, oil and mustard in a small bowl and set aside.
- 7 mix the herbs and feta together and set aside.
- 8 remove tomatoes from oven when cooked and place them on a serving platter and sprinkle with the combined herbs and feta.
- 9 drizzle with the dressing and freshly ground black pepper.
- 10 serve.
