Roasted Tomato Salad With Herbs And Feta

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 6 medium low acid tomatoes, halved lengthwise
  • olive oil flavored cooking spray
  • 1 1/2 teaspoons sea salt
  • 2 tablespoons red vinegar
  • 2 teaspoons olive oil
  • 2 teaspoons whole grain mustard (i use honey grain)
  • 1/2 cup fresh flat-leaf parsley, coarsely chopped
  • 1/2 cup fresh basil leaf, coarsely chopped
  • 50 g feta, crumbled
  • fresh ground black pepper

Recipe

  • 1 pre heat oven to 180c.
  • 2 spray a medium baking dish with the olive oil spray to coat.
  • 3 place the halved tomatoes, cut side up, in a single layer in the prepared dish.
  • 4 sprinkle with the sea salt and lightly spray with more olive oil spray.
  • 5 bake for 40 minutes or until tomatoes are lightly browned and tender.
  • 6 meanwhile, combine the vinegar, oil and mustard in a small bowl and set aside.
  • 7 mix the herbs and feta together and set aside.
  • 8 remove tomatoes from oven when cooked and place them on a serving platter and sprinkle with the combined herbs and feta.
  • 9 drizzle with the dressing and freshly ground black pepper.
  • 10 serve.
