Okra Etouffee

Total Time: 1 hr 45 mins Preparation Time: 30 mins Cook Time: 1 hr 15 mins

Ingredients

  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 3 cups okra, sliced
  • 1/4 cup cooking oil
  • 1 cup canned tomato
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon red pepper
  • 1/4 cup cracker, crumbed

Recipe

  • 1 spread okra in a greased casserole.
  • 2 cover with oil, tomatoes, onion. green peppers, and seasoning.
  • 3 cover loosely with foil.
  • 4 bake at 400* for 1 hour or until tender.
  • 5 uncover.
  • 6 top with crumbs.
  • 7 bake for another 15 min or until crumbs are lightly browned.
