Okra Etouffee

Ingredients
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 3 cups okra, sliced
- 1/4 cup cooking oil
- 1 cup canned tomato
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon red pepper
- 1/4 cup cracker, crumbed
Recipe
- 1 spread okra in a greased casserole.
- 2 cover with oil, tomatoes, onion. green peppers, and seasoning.
- 3 cover loosely with foil.
- 4 bake at 400* for 1 hour or until tender.
- 5 uncover.
- 6 top with crumbs.
- 7 bake for another 15 min or until crumbs are lightly browned.
