- 2 yellow zucchini
- 2 eggplants
- 2 green zucchini
- 1/2 red pepper
- 1 small onion
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon olive oil
Recipe
- 1 dice vegetables.
- 2 mix salt, pepper, olive oil, and vegetables.
- 3 arrange on non-stick baking sheet or sheet sprayed with olive oil.
- 4 bake for 20 minutes at 420 degrees.
